When you want a fun and unique breakfast for your family and friends a breakfast ring is the perfect recipe to make! It comes together so quick and you can make 8 servings at one time. No more frying individual eggs for everyone, instead make a big batch of scrambled eggs and make a breakfast ring.
Brunch has grown in popularity over the years but making breakfast for a crowd is often very time consuming. This recipe is a simple and delicious way to serve brunch for 8 (or 16) guests all at once without having to stress!
What is a Breakfast Ring
A breakfast ring is the ultimate dish to serve for family breakfast, holiday brunch, or to make in advance for a quick grab and go breakfast. Crescent rolls are stuffed with scrambled eggs, cheddar cheese, cooked bacon, red bell pepper and onions.
All the great flavors of a classic bacon egg and cheese sandwich are baked into a ring shape. Simply slice and serve the ring instead of having to prep individual breakfast sandwiches.

Ingredients
- Eggs - the breakfast ring is packed with scrambled eggs
- Bacon - you can use store-bought pre-cooked bacon or pan fry bacon for this recipe
- Cheddar Cheese - we love the classic combination of bacon, egg, and cheddar cheese. You can use any cheese you like or have on hand for this recipe. Some fun flavor twists include - Tex Mex shredded cheese, jalapeno Monterrey jack cheese, smoked cheddar, or an herb and garlic mozzarella cheese.
- Crescent Rolls - Pillsbury crescent rolls are a secret weapon in the kitchen. Around the holidays we always keep a pack in the fridge for last minute entertaining recipes like our Meatball Sub Cups and Chili Cheese Dog Dip appetizers!
- Onion and Red Bell Peppers - these are optional if you prefer you can omit them. We like to add them into the scrambled eggs to add extra flavor.
- Everything Bagel Seasoning - optional but recommended. This is baked on top of the crescent rolls to add even more flavor and give the ring an everything bagel flavor. You can omit or swap for sesame seeds if you prefer.
- Salt & Pepper - to season the scrambled eggs
How to Make a Bacon Egg and Cheese Breakfast Ring

Prepare the Filling
- Preheat oven to 375°F.
- In a large skillet over medium-high heat, add the bacon. Cook for about 3-4 minutes per side, or until cooked through and just starting to get crispy. You want the bacon to be a bit soft so that you can roll it in the crescent ring. Remove the cooked bacon from the pan and place on a paper towel to drain the excess fat.
- Remove some of the bacon fat from the pan so there is only about a teaspoon left. Add in the diced red bell pepper and onion. Sauté for 2-3 minutes or until tender.
- In a bowl add the eggs, season with the salt and pepper. Add to the pan and stir with a spatula to cook and scramble the eggs (the bell peppers and onions will become mixed into the scrambled eggs).
Prepare the Ring
- Line a large sheet pan or pizza tray with parchment paper.
- Carefully open the crescent roll package and unroll them. To create the ring, arrange the crescent dough triangles with point of each triangle facing out towards the edge of the tray. Overlap each piece of dough so that the base (short side) of each triangle is lightly overlapped, it will look like a giant star shape on the pan and there will be a round circle open in center (see image). Don’t worry if the crescent dough points hang over edge of pan, they will be folded over soon. Press overlapping dough to flatten and stick the pieces together.
- On each crescent roll lay a piece of bacon along the stars points (i.e. from the center of the ring, outwards to the point of each piece of dough).
- Sprinkle half of the shredded cheese along the center of the dough ring. Evenly distribute the scrambled eggs over top of the cheese, then add the remaining cheese on top.
- One at a time, roll the crescents and bacon over by picking up each point of the star and folding it over the scrambled eggs and cheese. Tuck the stars point under the center of the ring to secure it in place.
- Optional: top the crescent rolls with Everything Bagel Seasoning or sesame seeds
- Bake for 20-25 minutes or until the crescents are cooked and golden brown.
- Serve with salsa to dip and enjoy! To serve, slice the ring where the scrambled eggs are exposed, this will give you the cleanest cuts and will serve 8 pieces. You can also slice into smaller pieces if preferred.
Tips for the Best Breakfast Ring
- Crescent Rolls - be sure to follow the recipe steps as described for best results. When assembling the over lap the end of each crescent roll and press them together to ensure they stick together while baking.
- Filling - we love the classic combo of bacon, egg and cheese. However, this recipe is completely customizable. You can swap the bacon for turkey bacon, deli ham, or even breakfast sausage. For breakfast sausage just remove the sausage from the casing, pan fry and crumble the sausage with the spatula until cooked through. When cooking the eggs add in the cooked sausage so that there are bits of sausage all throughout the scrambled eggs.
- Serving - this recipe is made best using Pillsbury regular sized crescent rolls. They are sold in 8 ounce tubes and there are 8 crescent rolls in the tube. If you can only find the grands crescents which have 4 grand size crescents in the tube, you will need to use two tubes. There will be more dough and it will puff up more!
- Doubling this Recipe - if you would like to double this recipe we do not recommend doubling to create one large ring with 16 crescent rolls as it won’t fit on a sheet pan or pizza tray. If you would like to double this recipe we recommend making two separate breakfast rings that will serve 16 slices total. This is also a fun way to make two flavors! You can make one bacon, egg and cheese and the other ham, egg and cheese. Or you can make both bacon, egg and cheese and omit the red bell peppers and onions if you have guests who would prefer to not have those ingredients.
FAQ Bacon Egg and Cheese Breakfast Ring
Reheat the leftovers in the oven at 350°F on a sheet pan or baking dish covered with foil for about 10-12 minutes. Then remove the foil and bake for an additional 2-3 minutes or until warmed through.
Store leftovers in an airtight container in the fridge for up to 3-4 days. We recommend slicing leftovers into serving sizes for easier storage. You can stack the pieces and place a piece of parchment paper or plastic wrap between the layers to prevent the crescent rolls from sticking together.
Yes! This recipe is perfect for make ahead. Follow the recipe as per usual to assemble the crescent rolls up to 3-4 hours in advance. Store on the baking tray covered with plastic wrap in the fridge. Just before serving remove from the fridge. Bake covered with foil at 350°F for 20-25 minutes. Remove the foil and bake for an additional 4-5 minutes or until the crescent rolls are golden brown and the eggs are warmed through. If you would like to prepare this recipe one or more days ahead then we recommend following the recipe and baking the breakfast ring. Allow it to cool and store in the fridge covered. Just before serving remove from the fridge and reheat per the above reheating instructions.
Yes! This recipe is freezer friendly, perfect for grab and go breakfasts. I recommend slicing the ring into individual servings, wrap them tightly in plastic wrap and then store them in a freezer safe air tight container or Ziploc bag. Freeze for up to 3 months. Reheat from frozen by removing the plastic wrap and microwaving for 2-3 minutes (or until warmed through), or reheat in the oven on a baking tray covered with foil for 5-10 minutes (or until warmed through) at 350°F.
This is a protein packed, well rounded breakfast. For an even healthier option you could use your own homemade pizza dough instead of crescent rolls, swap the bacon for turkey bacon, and reduce the amount of cheese by half.
