Tips for the Best Strawberry Cheesecake French Toast
- Bread - we recommend a thick sliced brioche, French bread, or white bread of choice for this recipe. Since the filling is cream cheese based and gets nice and melty and creamy when cooked, it is important to have a thick bread that does not get too soggy. Brioche has a subtle sweetness that is perfect for French toast! You can use any store bought or home made bread you like.
- Filling - ensure your cream cheese is at room temperature before preparing this recipe. Leave the cream cheese out of the fridge for about 15-20 minutes so it can come to room temperature. You can prepare the strawberries and the remaining ingredients during that time. If the cream cheese is too cold, it will be to hard to stir the strawberries into it and the strawberries will get crushed. This is still delicious but it will just make it easier for you if it's at room temperature.
- Berries - we love the strawberry cheesecake combination but you can also use any berries you like or have on hand. It's a great way to use up the last of the container of berries you have in your fridge! Any combo of blueberries, raspberries, blackberries, and strawberries works great. You can even remove the pits from cherries and slice them up for the filling.

You can make this recipe ahead and reheat per the above instructions. For best results we recommend making the recipe fresh. You can prepare the filling 1 day in advance and then prepare the French toast just before serving.
We do not recommend freezing this recipe as the cream cheese filling will split when frozen and will become watery when thawed and reheated.
