  • Salt, optional – chorizo is a heavily seasoned sausage, depending on the brand purchased it may already be salty enough for your taste.

1 Heat a large frying pan on medium heat. Use a knife to carefully slice the casing of each chorizo sausage down the center. Remove the casing and add the meat to a frying pan.

2 Use a spatula to crumble the meat into bite sized pieces. Allow the meat to sauté for 5-7 minutes or until browned.

Note: as the meat cooks it will release oil. Depending on the brand of sausage used, there may be excess oil left in the pan. If needed, remove oil with a spoon to leave only enough to lightly coat the bottom of the pan.

3 In a small bowl whisk together the eggs. Pour over the cooked chorizo and allow to set for 1 minute before stirring. Then, gently stir the eggs and chorizo and cook to preferred scrambled egg doneness, about 2-3 minutes. Season to taste with salt.

Serve with a side of refried beans topped with cotija cheese, corn tortillas and sliced avocado. Enjoy!

Notes on Chorizo: Mexican Chorizo is a raw sausage, not smoked or cured. If you cannot find Mexican Chorizo you can also use Spanish chorizo (cured) or Portuguese chouriço (smoked). If using Spanish or Portuguese, cut the sausage into small bite sized pieces and then follow the recipe per usual.
