Let's turn the classic baked potato into a finger food appetizer or side! We love baked potatoes but we don't love the long baking time that comes with them. Instead these loaded baked slices are made in a fraction of the time and are just as delicious.
What are Loaded Baked Potato Slices?
Baked potato slices are a twist on the classic baked potato. Potatoes are thinly sliced, seasoned and baked until fork tender. Then topped with all your favorite baked potato toppings (completely customizable to your liking!). Baked once more to get the cheese nice and melty and then served with sour cream to dip.
These are a fun side dish to your dinner or a great finger food appetizer for holiday entertaining, game days and get togethers! You can make a bunch of different flavor variations at one time to suit your guests liking.

What is in Loaded Baked Potato Slices?
- Potatoes - we recommend russet potatoes for this recipe. You can use any potato you have on hand or your favorite potato variety.
- Oil - brushed on the potato slices before baking.
- Italian Seasoning - to season the potato slices before baking.
- Salt and Pepper - to season the potato slices before baking.
- Cheddar Cheese - we are huge fans of cheddar cheese on baked potatoes! However, you can use up any cheese you have in the fridge or your favorite cheese. If you like spicy food you can even use a spicy Havarti, jalapeno Monterrey jack, or a Mexican cheese blend!
- Bacon - everything is better with bacon and nothing makes a baked potato better than a little bacon!
- Green Onion - fresh green onions are added to the baked potato slices after they are cooked. They add a fresh pop of onion flavor and a beautiful color.
How to Make Loaded Baked Potato Slices

- Preheat oven to 375°F.
- Line a baking sheet with parchment paper or tin foil (spray the foil with non-stick cooking spray).
- Carefully cut potatoes into ½ inch slices. Try to keep the slices the same thickness so they evenly cook at the same time.
- Arrange the potato slices on the baking sheet, leaving a small space between each slice.
- Brush both sides of the slices with olive oil and season the tops with salt, pepper and Italian seasoning.
- Bake the potatoes in the preheated oven for 15 minutes. Flip each slice and cook an additional 5-10 minutes or until they are fork tender (pierce a slice with a fork or knife and if the utensil slides in easily, they are done).
- Remove the potatoes from oven and reduce the heat to 350°F.
- Evenly distribute the shredded cheese and crumbled bacon over the potato slices. Place the baking sheet back in the oven until the cheese is melted, about 5 minutes.
- Remove the potatoes from the oven and transfer to a serving platter. Sprinkle the sliced green onions evenly over the potato slices.
- Serve with sour cream and enjoy!
Tips for the Best Loaded Baked Potato Slices
- Potatoes - we recommend using russet potatoes for this recipe. They have the best consistency and texture for baking, they get crispy on the outside and remain creamy on the inside. Slice the potatoes into even ½ inch slices. Try to make them all the same thickness so that they cook evenly at the same time. Be careful not to slice the potatoes to thin or they will be too flimsy to pick up.
- Spices - you can season the potato slices with your favorite seasoning mix instead of Italian Seasoning. For example, use Ranch seasoning mix, Taco seasoning mix, etc.
- Toppings - use your favorite cheese or combination. We love cheddar cheese but you can use any combination of Monterey Jack, Gouda, Parmesan, spicy Havarti, jalapeno Monterey Jack, etc. You can also customize the toppings instead of just using bacon you can use any toppings you like for example, broccoli, chives, caramelized onions, mushrooms, and more.

Store in the fridge in an airtight container for 3-4 days.
You can prepare and bake the potato slices. Once ready to serve add the toppings and bake as per the recipe.
Yes, they can be frozen. I would suggest leaving out the green onions. To reheat, bake at 325° for 8-10 minutes.
Omit the bacon and substitute with broccoli, sauteed onions or mushrooms.
For a vegan recipe use a vegan cheese and omit the bacon, swap for caramelized onions or mushrooms.
