Chili's Big Mouth Bites Copycat Recipe
One of my favorite appetizers at Chili's is their Big Mouth Bites! Sliders are always a fun way to start a meal and these are simply delicious.
I love a recipe that I can serve as an appetizer, finger food at a game day party, snack at a holiday get together, or a main course with a side salad. Sliders are fun for all ages and they are always a hit! Try out my Big Mac Sliders, and Pull Apart Meatball Sliders too!

What are Big Mouth Bites?
Big Mouth Bites are an appetizer at Chili's. They are slider burgers with cheddar cheese, bacon, caramelized onions and a jalapeno ranch dressing. In the restaurant they are served as an appetizer (4 sliders) with a side of fries.
I like making these sliders at home and using Kings Hawaiian Slider rolls. I make 12 sliders at a time and they are perfect for movie nights, game nights, get togethers and family gatherings! Or, I serve them as a weeknight meal for the family as a main course.
What is in Big Mouth Bites?
- Ground Beef, Salt, Pepper, Garlic Powder - the slider patties are made with a simple seasoning blend of garlic powder, salt and pepper. I like using lean or medium ground beef for my patties so they stay moist and do not shrink as much during cooking.
- Slider Buns - you can use any variety of store bought or homemade slider buns. I love using Kings Hawaiian rolls as they have a hint of sweetness that pairs perfectly with the bacon and cheese!
- Bacon - who doesn't love bacon?
- Cheese - my favorite burger topping combination is cheddar cheese and bacon! There is something about the strong sharp flavor of cheddar that pairs so perfectly with bacon. To make these just like Chili's use cheddar cheese, but you can also swap this for any cheese you like... even a spicy Havarti for an extra spicy slider!
- Onion, Butter - caramelized onions are served on these sliders and they are oh so delicious!
- Ranch and Pickled Jalapenos - Chili's secret ingredient in their ranch dressing is pickled jalapenos! It adds a bit of heat without being too spicy. A generous amount of ranch is spread on the tops AND bottoms of the sliders for an extra saucy bite!

Prepare the Toppings
1 Add the ranch dressing and pickled jalapenos into a blender. Puree until the dressing is smooth. The flavor increases the longer it sits in the fridge. Try to prepare it a couple hours in advance and store in the fridge while you prepare the sliders.
2 Cut the slices of cheddar cheese into quarters
3 Cook bacon in a large skillet over medium-high heat until browned and crispy. Drain on paper towels. When the bacon has cooled, cut each strip into 3 pieces
4 Remove some of the bacon grease leaving only 1 tablespoon in the pan. Add the diced onion and sauté until the onion is tender. Remove from the pan and set aside.
Prepare the Slider Patties
1 Prepare the patties by adding the ground beef to a large bowl. Add the garlic powder, salt and pepper and mix until just combined. Form the ground beef into 12 small patties.
2 Heat the skillet with the remaining bacon grease to medium-high heat. Add the hamburger patties and cook, turning once until the hamburgers are fully cooked 3 - 4 minutes per side.
Assemble the Sliders
1 While the patties are cooking, cut the slider buns in half and spread the melted butter on the cut side of each bun. Place cut side up on a baking sheet and broil in the oven for 3-4 minutes or until toasted.
2 Remove the toasted buns from the oven and spread a layer of the jalapeno ranch dressing on the toasted tops and bottoms of the buns.
3 Add a spoonful of sautéed onion on each bottom bun.
4 Top each bottom bun with 2 pieces of cooked bacon.
5 Add a slider patty on each bun and top with a piece of cheese. Place the top buns on the sliders.
Serve and enjoy!
What to Serve with Big Mouth Bites?
Chili's serves their Big Mouth Bites with French fries but I love to serve them with a side salad:
Tips for the Best Sliders
- Slider Patties - don't over mix the ground beef or the sliders will be tough. Form them into small patties
- Buns - I love using Kings Hawaiian slider rolls as they are sweeter than a regular slider bun. You can use any variety of slider buns from your local grocery store (ex. brioche, regular white bread, etc.).
- Ranch Dressing - if you don't have a blender you can puree the dressing in a food processor, or use a handheld immersions blender.

Place the sliders on a baking sheet and bake in the oven on 350° for about 5 minutes or until warmed through.
Transfer the cooled sliders to an air tight container and store in the fridge for up to 3 days (note: be sure to check the best before date on your cheese and ranch dressing).
Freeze assembled sliders without the ranch dressing. To reheat, thaw in the fridge overnight and then place the sliders on a baking sheet and bake in the oven on 350° for about 5 minutes or until warmed through. Or, microwave for 3-4 minutes from frozen, or until warmed through. Then add some of the ranch dressing and enjoy!
