If you love sandwiches, garlic bread, roast beef, cheese and caramelized onions you are in the right place! These garlic bread roast beef sliders are a quick 30 minutes dish that you will be making over and over. Perfect for entertaining as appetizers, or a main course for a weeknight dinner, these are always a fan favorite and crowd pleaser.

Sliders are perfect because they are hearty enough for a main dish but also just enough for an appetizer for game day, the holidays or get togethers. They can be made ahead making them great for entertaining with less time spent in the kitchen.

What are Roast Beef Sliders?

Roast beef sliders are mini sandwiches served on slider buns. Deli roast beef is piled high and topped with cheese and caramelized onions. The caramelized onions are packed with flavor from garlic and rosemary.

As if the delicious fillings weren’t enough for these sliders… the buns are topped with garlic butter! What is better than garlic bread?! Once the sliders are assembled and brushed with garlic butter they are baked until nicely toasted. The cheese is so gooey and melty it holds all the filling together.

What is in Roast Beef Sliders?

Slider Ingredients

  • Slider Buns – I love using King’s Hawaiian slider buns for this recipe. The sweetness of the rolls pairs so perfectly with the caramelized onions, roast beef and garlic butter. You can also use any store bought or homemade dinner rolls or slider buns.
  • Onions – regular cooking onions are great for this recipe, you can really use any onion you have on hand. Slice them as thick or thin as you prefer to your personal liking.
  • Roast Beef – deli thin sliced or shaved roast beef is recommended for this recipe. You can also use leftover homemade roast beef that has been thinly sliced or shaved.
  • Cheese – my favorite melty cheese for sandwiches is Havarti. It is extra creamy and rich making it perfect for sliders. You can even use a spicy Havarti for a spicy kick! Other cheeses you can use are mozzarella, provolone, Swiss, gruyere, or any white cheese you like. You can also use an aged cheddar if you like the beef and cheddar combo!
  • Butter – the onions are sautéed in melted butter.
  • Garlic – sautéed with the onions for added flavor… who doesn’t love garlic?!
  • Rosemary – for an added depth of flavor, fresh or dried rosemary is used to season the caramelized onions.
  • Salt & Pepper – to season the caramelized onions.

Garlic Butter Ingredients

  • Garlic Butter – to toast the slider buns garlic butter is brushed on top. You can use store bought garlic butter that has been melted or make your own.
    • Butter
    • Garlic Powder – instead of fresh garlic, garlic powder is used so that the minced garlic does not overcook when the buns are toasting.
    • Dry Mustard Powder – this adds a subtle mustard flavor to the garlic butter, reminiscent of a deli sandwich with mustard. If using store bought garlic butter I recommend adding dry mustard powder for the best flavor after you melt the garlic butter.
    • Parsley – fresh or dried parsley adds a pop of color on the tops of the buns.

Caramelized Onions

1 For the caramelized onions, in a large frying pan on medium heat, melt the 3 tablespoons of butter. Add the onions and cook on low for about 10-12 minutes until just starting to brown, stirring often.

2 Once the onions start to brown, add in the minced garlic and rosemary. Continue cooking for about 5 minutes or until the onions are caramelized and golden brown in color. Remove the pan from the heat and set aside.

Assemble the Sliders

1 Preheat oven to 350°F

2 Line a sheet pan or baking tray with parchment paper. Place the slider buns on top and cut them through the center. Set the tops of the buns to the side.

3 Assemble the sliders by first layering the roast beef on the bottoms of the buns.

4 Then add a layer of sliced cheese on top of the roast beef. Depending on the size of the slices of cheese, add 4 – 6 slices, or more to cover the roast beef.

5 Evenly distribute the caramelized onions over top of the cheese.

6 Place the slider bun tops back on.

7 Prepare the garlic butter in a small bowl by mixing together the melted butter, mustard powder, garlic powder and parsley. Stir until evenly combined.

8 Use a brush to spread the garlic butter over top of the slider buns. Brush garlic butter on the sides of the slider buns too.

9 Transfer the sliders to the preheated oven and bake for about 5-8 minutes, or until the cheese has melted and the buns are toasted.

10 Remove the sliders from the oven and allow to cool for 2-3 minutes. You can pull the sliders apart or use a knife to slice the sliders apart. Serve and enjoy!

Tips for the Best Roast Beef Sliders

  • Slider Buns – if you can find King’s Sweet Hawaiian rolls or brioche style slider buns I recommend using those. The sweetness of the rolls pairs perfectly with the savory filling and garlic butter topping. You can also use dinner rolls or regular slider buns.
  • Onions – caramelizing onions takes time… but it is well worth the wait. Properly caramelized onions can take up to 15 – 20 minutes to caramelize but the resulting flavor is so delicious! For the best flavor, caramelize the onions low and slow, stirring often. Once the onions start to brown add the garlic. If the garlic is added right at the beginning of cooking the onions it will burn before the onions are caramelized.
  • Cheese – don’t skimp on the cheese! The order for assembling these sliders is – roast beef, cheese, onions. The cheese is the binder between the onions and roast beef… and it is also just so delicious! Who doesn’t love cheese?! A solid layer of cheese is what holds the onions in place and melts over the roast beef.

How to reheat Roast Beef Sliders?

Reheat the sliders in the oven at 350°F on a sheet pan or baking dish covered with foil for about 5-8 minutes. Then remove the foil and bake for an additional 2-3 minutes or until the top buns are toasted.

How to store Roast Beef Sliders?

Store the cooled sliders in an airtight container in the fridge for up to 3-4 days (be sure to check the best before date of your cheese and adjust accordingly). The sliders can be stacked in the container, you can also put a piece of parchment paper or plastic wrap between the layers to prevent the bread from sticking together.

Can I make Roast Beef Sliders ahead?

Yes! Roast beef sliders are perfect for make ahead. Follow the recipe as per usual to assemble the sliders up to 2 days in advance but do not brush the garlic butter on the buns. Store covered in the fridge. Just before serving remove the sliders from the fridge, brush with garlic butter. Bake covered with foil at 350°F for 5 – 8 minutes. Remove the foil and bake for an additional 2-3 minutes or until the top buns are toasted and the meat is warmed through.

How to make Gluten Free Roast Beef Sliders?

For gluten free roast beef sliders use store-bought or homemade gluten free slider buns and follow the recipe as per usual. Be sure to check the label of your roast beef to ensure it is gluten free.
