Reuben Hasselback Potatoes Recipe
Imagine a classic Reuben Sandwich piled high with layers upon layers of thinly sliced corned beef, creamy swiss cheese, topped with tangy sauerkraut and Thousand Island dressing.
Now merge that with a classic baked potato. What better way to change up your regular baked potato game and sandwich game by merging the two into a crispy, cheesey hasselback potato?!
This might just be the ultimate hasselback potato.
What is in Reuben Hasselback Potatoes?

- This recipe only requires a few ingredients but once combined you are left with crispy, cheesy hasselback potatoes. This is a great way to use up leftover deli meats and cheese into a unique appetizer or side dish.
How to Make Reuben Hasselback Potatoes:

1 Wash and dry potatoes. Using two chopsticks or wooden spoons as a guide, carefully slice thin strips into the potato ¾ of the way through the potato (be careful not to slice fully through the potato). This will create the hasselback.
2 Brush the potatoes with oil on both sides. Season with salt and pepper. Add to an Air Fryer tray/basket or oven safe baking tray.
3 AIR FRYER COOKING METHOD: Air Fry potatoes for 30 minutes, brushing potatoes with additional oil halfway through cooking.
OVEN COOKING METHOD: Bake potatoes for 30 minutes, brushing potatoes with additional oil halfway through cooking.
4 Stuff strips of cheese and corned beef in alternating slices in each potato.
5 Return potatoes to Air Fryer or Oven and broil for 5 minutes until cheese melts and meat crisps up.
6 To Serve: Top each potato with sauerkraut and Thousand Island dressing.

- 5 slices Swiss cheese (or mozzarella, cut into strips)
