What are No Bake Oreo Cheesecake Cups
No bake cheesecake is a cheesecake that sets in the fridge instead of baking in the oven. For these Oreo cheesecake cups, the crust is made with crushed Oreos and melted butter. The filling is so rich and creamy thanks to the cream cheese, powdered sugar, vanilla and whipped cream. To make it even better we fold in crushed Oreos. The more Oreos the better! Decorated with a swirl of whipped cream and more crushed Oreos for the ultimate cookies and cream dessert in individual cups. No need to stress about baking and slicing a cheesecake!

Ingredients
- Oreo Cookies - used three ways, in the crust, folded into the filling and crushed on top. There's no need to remove the cream filling, it helps the crust hold together!
- Butter - melted butter binds the Oreo crumbs together to form the crust.
- Cream Cheese - ensure the brick of cream cheese is at room temperature to avoid lumps in your cheesecake filling!
- Icing Sugar - sweetens the cheesecake. Do not swap for granulated white sugar or else the cheesecake will be grainy.
- Whipped Cream or Cool Whip - folded into the filling for a light and fluffy texture, and used to garnish the top.
- Vanilla Extract - to flavor the cheesecake.

How to Make No Bake Oreo Cheesecake Cups

- Crush 20 Oreo cookies into very fine crumbs using a food processor, or place them in a large Ziploc bag and smash them with a rolling pin or the back of a spoon.
- In a small bowl, combine the finely crushed Oreos with the melted butter. Mix until evenly combined.
- Evenly divide the cookie crust between 12 ramekins or serving cups. Use a spoon or the bottom of a shot glass to press the crust down into an even layer. Transfer the cups to the fridge to chill while you prepare the cheesecake filling.
- Crush 8 more Oreo cookies in a Ziploc bag or break them up by hand. Do not use the food processor for these cookies or they will be too finely crushed.
- In a large bowl, add the room temperature cream cheese, vanilla and icing sugar. Use a handheld mixer, or whisk vigorously by hand, until smooth and evenly combined. Then gently stir in the whipped cream and crushed Oreos.
- Remove the cups from the fridge and evenly divide the cheesecake filling between them. Use a spoon to spread the filling into an even layer and smooth the top.
- Optional: garnish each cup with a dollop of whipped cream and a few more Oreos crushed by hand.
- Store in the fridge until ready to serve. Enjoy!

Tips for the Best Cups
- Two Ways to Crush the Oreos - for the crust, crush the Oreos into very fine crumbs so the crust presses together nicely. For the filling and topping, crush them by hand or in a bag so you get bigger, chunky pieces of cookie in every bite.
- Cream Cheese - it is important to ensure that the cream cheese is softened at room temperature. You can leave it on the counter while you prepare the other ingredients so that it softens up. If you use cream cheese straight out of the fridge it will be lumpy when you prepare the cheesecake filling.
- Flavor Variations - the fun part about this recipe is that you can use any flavor of Oreo such as Golden Oreos, Mint Oreos, Peanut Butter Oreos or seasonal Oreos for a fun festive twist.

- 20 Oreo cookies (crushed)
- 1 stick unsalted butter (melted)
Cheesecake
- 8 ounces cream cheese (1 block, softened)
