What is in Mocha Brownie Trifles?
- Brownies - store-bought or homemade brownie mix can be used for this recipe. Bake the brownies and allow them to fully cool before slicing into cubes.
- Vanilla Pudding Mix - store-bought vanilla pudding mix makes this a quick and easy recipe. It is recommended to use a vanilla pudding mix package that makes 4 servings but depending on your location they may be sold in 6 serving packages. You can really use any size package above 4 servings and it will just add a little bit more pudding to each layer of the trifle.
- Coffee - to make the mocha pudding, cooled black coffee is added to vanilla pudding mix to replace part of the milk that is required for the pudding mix. This gives the pudding a nice coffee flavor without it being too overpowering or bitter. If you prefer to have a coffee free recipe you can replace the coffee with milk. Note: you do not need to add sugar to the coffee as the vanilla pudding mix is sweet enough already.
- Milk - to prepare the vanilla pudding mix (you will use the milk measurement per the package LESS ¼ cup of milk).
- Whipped Cream - for quick baking recipes I love using Dream Whip to make whipped cream. You can also use store bought whipped cream, or homemade with heavy cream, powdered sugar and vanilla extract.
- Toffee Bits - we love the combination of toffee, chocolate and coffee! Toffee bits or crushed Skor chocolate bars can be used. Some are layered in the trifle and the rest are sprinkled on top for garnish.
How to Make Mocha Brownie Trifles

1 If using store-bought brownie mix, prepare brownie mix according to package directions. If making homemade brownies, prepare and bake them following recipe. Allow the brownies to fully cool at room temperature for 20-30 minutes. Once cooled cut into small bite sized cubes (approximately 1"-2" cubes).
2 Prepare the mocha pudding. In a large bowl add the vanilla pudding mix. Per the vanilla pudding mix package directions, add the required milk measurement LESS ¼ cup of milk per package (i.e. 1 package of vanilla pudding mix that serves 4 requires 2 cups of milk, only add 1 ¾ cups of milk). Add in the cooled coffee (if using, or ¼ cup of milk instead). Mix until evenly combined. Set aside.
3 If using Dream Whip, prepare 1 packet according to package directions.
Assemble the Trifle
1 To make individual servings, in 12 ramekins, mugs, small bowls, or mason jars, layer the cubed brownies, toffee bits, mocha pudding and whipped cream (save 3-4 cubed brownies and 1 teaspoon of toffee bits to decorate the top). Depending on the size of the ramekins create 2-3 layers. On the top layer add the reserved toffee bits and brownies to garnish.
2 To make one large trifle use a trifle bowl or a large bowl. Split the cubed brownies into thirds (save 3-4 cubed brownies for decorating the top). Add the first layer of brownies to the bowl, one third of the toffee bits (save 1 tablespoon for decorating the top), one third of the mocha pudding and one third of the whipped cream. Repeat to create 2 more layers. Decorate the top of the trifle with the reserved brownies and toffee bits.
3 Store the prepared trifle in the fridge until ready to serve. Enjoy!
Tips for the Best Mocha Brownie Trifles
- Brownies - you can use store-bought brownie mix for this recipe or make homemade brownies. Be sure to allow the brownies to fully cool before slicing them. To get clean cuts when cubing the brownies, carefully wipe the knife clean with a kitchen towel or paper towel between each slice. You can also carefully run the knife under warm water between each cut to help make the cuts cleaner.
- Mocha Pudding - we love the combination of chocolate and coffee but you can also omit the coffee in this recipe if preferred. Instead of coffee you can use milk.
- Serving - trifles are best served chilled straight out of the fridge. It is best to prepare the trifle at least 1-2 hours prior to serving so that it has time to chill and for the flavors to develop. For best results prepare the trifle 1 day in advance.

Store the prepared trifle in the fridge for up to 3-4 days. Note: the brownies will absorb moisture from the pudding and whipped cream the longer the trifle is stored in the fridge.
Yes! The trifle is even better when prepared 1 day in advance so the flavors can develop.
You can freeze the trifles in freezer safe containers for up to 3 months. Please note if using homemade whipped cream the whipped cream may separate or change texture when thawed.
