Toaster strudels were one of our favorite breakfast treats growing up, we've had every flavor variation so we are definitely experts on the topic! We just knew we had to make a homemade version! They're surprisingly easy and taste so much better fresh out of the oven, with a flaky, buttery crust that you just can't get from the freezer aisle.

What are Toaster Strudel
A toaster strudel is a flaky pastry filled with fruit and served with a sweet icing on top. Our homemade version uses store bought puff pastry for the ultimate quick and easy toaster strudels! They're baked until golden and then finished with drizzle of homemade icing. These will bring back all the fond childhood memories of enjoying this classic frozen treat!

Ingredients

- Puff Pastry - store-bought puff pastry makes this recipe quick and easy. It is found in the freezer aisle. Thaw it overnight in the fridge or on the counter for about 1 hour.
- Icing Sugar - to make the icing.
- Milk - to make the icing and give it a smooth, pourable consistency.
- Vanilla Extract - to flavor the icing.
- Strawberry Jam and Cornstarch - the jam is the fruity filling and the cornstarch helps thicken it so it doesn't run out while baking.
- Egg Wash - a whisked egg is brushed over the pastry before baking to give a beautiful golden, shiny finish. It is also used to seal the strudels shut.

How to Make Toaster Strudel

- Preheat oven to 400°F. Line a large cookie sheet with parchment paper.
- On a lightly floured cutting board, roll out the first sheet of puff pastry. Cut it into 6 rectangle pieces.
- In a small bowl combine the strawberry jam and cornstarch. Mix until evenly combined.
- Prepare the egg wash by whisking the egg in a small bowl.
- Brush the edges of three of the pieces of cut pastry with the egg wash.

- Add 2-3 tablespoons of the strawberry jam mixture into the center of each of the pieces of pastry with the egg wash, spread it out to just meet the edge of the egg wash.
- Place a second piece of pastry on top and line up the edges so they fit directly on top of each other. Use your fingers or a fork to press the edges together to seal the toaster strudels shut. Place on the prepared baking tray spaced 1 inch apart.
- Repeat with the second sheet of pastry to make 6 total toaster strudels.
- Brush the remaining egg wash over the tops of all of the toaster strudels and use a fork to gently pierce a few holes in the top of the strudel to allow air to escape.
- Place in the preheated oven and allow to bake for 13 - 15 minutes or until the pastry has puffed up and is golden brown in color.
Decorate and Serve
- While the toaster strudels bake, combine the frosting ingredients in a small bowl. Stir together with a fork until evenly combined and smooth.
- Allow the homemade toaster strudels to cool completely and then use a fork or spoon to drizzle the icing over top. Serve and enjoy!

Tips for the Best Toaster Strudel
- Flavor Variations - Instead of strawberries, you can use blueberries or raspberries. If you like chocolate dipped berries you can add a tablespoon of cocoa powder to the icing to make it a chocolate flavored icing.
- Puff Pastry - we used store-bought puff pastry. This is usually sold in the freezer aisle right next to other desserts and ice cream. Thaw the pastry overnight in the refrigerator, or at room temperature for 1 hour.

FAQ
For best results reheat in the oven to get a crispy texture. Microwaving is fine but the pastry will not be as crispy. They are best reheated BEFORE the icing is put on. If the icing is already put on we recommend eating at room temperature as the oven or microwave will melt the icing too much.
Store in an airtight container in the refrigerator to retain freshness for up to 2-3 days.
You can prepare them up to 2-3 days in advance. If you plan on serving them at a later date we recommend waiting to make the icing until just before serving so it can stay fresh.
You can freeze baked and cooled pastries in a freezer safe container for up to 3 months without the icing on top. Thaw in the fridge overnight or reheat from frozen in the oven. Then make the icing and drizzle on top.
This recipe is vegetarian.
Use a gluten free puff pastry, which can be found in the freezer aisle of many grocery stores. Everything else in the recipe is gluten free.
