What is Cold Spinach Artichoke Dip
Spinach artichoke dip is a rich, creamy and cheesy dip. Packed with spinach, artichokes, parmesan cheese, garlic, and water chestnuts. This cold version is a twist on the classic hot spinach artichoke dip. It's the ultimate crowd pleaser that requires zero cooking and minimal effort, it comes together in under 10 minutes in just one bowl!

Ingredients

- Spinach - we love this recipe for a quick appetizer or last minute entertaining recipe. It uses frozen spinach so it's a pantry staple recipe as you can keep a bag of frozen spinach on hand for a last minute recipe.
- Artichokes - canned artichokes are perfect for this recipe because you just need to drain them and dice them up. It's great to keep a can in your pantry for a quick last minute appetizer recipe!
- Water Chestnut - we love the addition of water chestnuts to give the dip a crunchy component!
- Cream Cheese - the base of the dip. For best results, ensure it is at room temperature. Leave it on the counter while you prep the remaining ingredients or you can microwave it for 15 seconds to soften it up. This makes it much easier to stir the dip together.
- Sour Cream - this gives the dip a creamy texture and adds a tangy flavor.
- Mayonnaise - this gives the dip it's extra rich and creamy texture. If preferred, you can swap for plain Greek yogurt or Skyr for a healthier recipe.
- Parmesan - adds a nice rich flavor to the dip.
- Garlic Powder - everything is better with garlic! Our favorite part of a spinach artichoke dip is the rich garlicy flavor. Since this is a cold dip, it is recommended to use garlic powder rather than fresh garlic so it is not overpowering.
- Cayenne Pepper - this is optional but it adds a bit of spice and extra flavor to the dip.

How to Make Cold Spinach Artichoke Dip

- If your cream cheese is not at room temperature, place it on a microwave safe plate and heat for 15 seconds.
- In a large mixing bowl, add the softened cream cheese, sour cream, and mayonnaise. Stir until smooth and well combined.
- Add in the garlic powder, chopped spinach, chopped artichokes, diced water chestnuts, green onion, parsley, parmesan cheese, salt, and pepper. Mix until fully combined.
- Season to taste as needed with salt and pepper.
- The dip can be served immediately or chilled in the fridge for 30 minutes for the flavors to develop.
- Serve with chips, warm or toasted bread, tortilla, pita chips, crackers or vegetables to dip and enjoy!

Tips for the Best Dip
- Cream Cheese - be sure that your cream cheese is at room temperature or else the dip will be very hard to mix together. While you prep all the ingredients for the recipe leave the cream cheese on the kitchen counter. Or you can place it on a microwave safe plate and heat for 10 seconds, or until slightly warm and soft to the touch.
- Flavor Variations - there are so many different ways to make this dip. We love the classic combo of just spinach and artichoke. However, you can add in a few more ingredients to change up the flavor and keep the dip unique. For example, finely diced red bell pepper, red onion, cooked bacon bits, diced jalapenos, cooked diced shrimp, or cooked diced crab!
- For Serving - this dip can be served with chips, vegetables, pita bread, baguette, or any kind of crostini that you like. It's a fun way to keep the dip unique each time you serve it, try serving it with something different to dip!

- 8 oz cream cheese (softened, 1 brick, 250 grams)
- ½ cup sour cream (or plain Greek yogurt)
- ½ cup mayonnaise (or plain Greek yogurt)
- 1 teaspoon garlic powder
- 12 oz frozen chopped spinach (thawed and very well drained, approximately 1 ½ cups)
- 14 oz artichoke hearts (drained well and chopped, 1 can)
- 1 can water chestnuts (drained and finely chopped)
- ½ cup green onion (finely chopped)
- ¼ cup parsley (finely chopped)
- ½ cup Parmesan cheese (shredded)
- ¼ teaspoon cayenne pepper (optional)
- 1 teaspoon salt (or to taste)
- ¼ teaspoon black pepper (or to taste)
