Ingredients

- Bananas - overly ripe bananas are the base of a great banana bread! You want bananas that have lots of dark brown and black spots, or that are entirely brown.
- Pro Tip: if you have bananas on the counter that are getting very ripe you can peel them and pop them in the freezer in a Ziploc bag. When you want to make a banana bread just leave the bananas on the counter to thaw while you prep all the other ingredients.
- Brown Sugar - this adds a rich sweet flavor to the bread. Only ½ cup is used because the bananas add a sweetness on their own so you don't need to add a large amount of sugar. The rich molasses flavor of the brown sugar pairs so well with the bananas.
- Oreos - crushed Oreos are mixed into the banana bread and used to top the banana bread as well. We love using regular Oreos for this recipe but you can also use golden or a flavored Oreo!
- Flour - all purpose flour is used for the bread.
- Butter - makes the bread light and fluffy.
- Greek Yogurt - this is our secret ingredient! This protein packed yogurt makes the bread so light and fluffy... there's actually a science to it! The acidity of the yogurt actually breaks down the gluten in the flour which makes the bread light, fluffy and more moist.
- Egg - this recipe is great because it only needs 1 egg!
- Vanilla - vanilla extract brings out the natural sweetness of the bananas.
- Baking Soda
- Salt

Prepare the Batter
- Preheat oven to 350°F.
- Prepare the loaf pan: Slice a 1" cube of unsalted butter and use your hands to rub the butter along the whole interior of the pan being sure to coat thoroughly. We recommend butter over cooking spray to ensure the loaf comes out perfect from the pan, it also gives the crust a nice crispy buttery flavor!
- In a medium sized bowl mix the dry ingredients together.
- Using a stand mixer or a hand mixer in a large bowl, beat the butter until light and creamy. Add the sugar and beat until light and fluffy.
- Add the egg. Mix for about 30 seconds, or until evenly combined.
- Add in the bananas and vanilla. Mix on low speed until just combined.
- Mix in half the dry ingredients mixture. Then mix in the yogurt. Lastly, mix in the remaining dry ingredients mixture.

Prepare the Loaf
- Add the Oreos to a large Ziploc bag or bowl. Crush the Oreos until they are in small bite sized pieces. Or you can place them on a cutting board and roughly chop them. Measure out ¼ cup of the crushed Oreos and set aside. Pour the remaining crushed Oreos into the banana bread batter and stir until just combined.
- Pour the batter into the buttered pan and use a spoon or spatula to smooth the top.
- Sprinkle the reserved ¼ cup of crushed Oreos on top of the banana bread.
- Bake for approximately 60-75 minutes. Checking every 5 minutes after 60 minutes of cooking, pierce a toothpick into the center of the bread. If there are little to no crumbs or batter on the toothpick and the bread does not jiggle in the center, it is done.
- Remove the pan from the oven and place on a cooling rack for 10 minutes to cool. Once cooled shake the pan a few times to loosen the bread. Place a plate or cooling rack on top of the pan to cover the bread. Carefully flip and remove the pan. Cool another 10 minutes before slicing.
- Slice and serve. Store at room temperate in an air tight container or covered in plastic wrap.

Tips for the Best Banana Bread
- Oreos -we love to use regular Oreos for this recipe but you can get creative and use different flavors. Golden Oreos are delicious in this recipe as well as seasonal flavors such as birthday cake, maple, caramel, and more!
- Butter - the butter must be at room temperature or else the batter will not mix together properly. If your butter is straight out of the fridge, place it on a microwave safe plate and microwave for 10 seconds.
- Bananas - the riper the bananas the better! You want them to have lots of dark brown/black spots on them. If they are completely brown that means they are the sweetest. If using frozen bananas, allow them to fully thaw and then thoroughly mash them.
- Yogurt - for best results we recommend Greek yogurt. This gives the banana bread the best texture. You can swap for regular plain yogurt or sour cream for similar results.
