Who doesn't love chips, crackers, or warm baguette dipped into a cheesy irresistible dip?! We are HUGE fans of jalapeno poppers, we've shared so many fun variations on the classic appetizer.
Our Mexican Street Corn Dip is one of our favorite cold dips served with tortilla chips. We knew we had to come up with a baked version that combined street corn and jalapeno poppers. In comes our addictive and so easy to make, jalapeno popper corn dip. It's the perfect mix of sweet, salty and spicy flavors. It's great for game days, New Year's eve appetizer parties, and holiday entertaining!

This jalapeno popper corn dip is the perfect mix of sweet, salty, and spicy flavors. A rich and creamy cheese cheese based dip is packed with jalapenos, bacon, cheddar cheese, and corn. Served with tortilla chips to dip it's a fun twist on classic bacon wrapped jalapeno poppers. The corn adds just the right amount of sweetness to this highly addictive dip. You will be making this on repeat!

Ingredients

- Cream Cheese - this is what is traditionally stuffed into jalapeno poppers. It gives the dip the most rich and creamy texture.
- Jalapeno - chopped jalapenos are mixed into the dip. They are one of the most unique and flavor packed peppers. You don't need to worry about them being overly spicy. Once the seeds and ribs (white lines that the seeds grow on) are removed, they are a fairly mild pepper.
- Corn - we love the combination of sweet corn and a slightly spicy jalapeno pepper. It's the perfect match for this dip! The combination of sweet and salty is simply perfect. You can use frozen corn that has been thawed or canned corn that has been drained very well. You can also use a fire roasted corn for even more flavor or if you make this in the summer you can grill the corn to give it a slight char!
- Sour Cream - this give the dip a creamy texture and a pop of tangy flavor.
- Cheddar Cheese - we love the classic combination of cheddar, bacon, and jalapenos. You can swap this for any shredded cheese you have on hand such as mozzarella, or even a pepper jack or jalapeno Havarti for extra spice!
- Cooked Bacon - who doesn't love bacon! Crispy cooked bacon is mixed into the dip and some is reserved for topping the dip. It's oh so crispy and delicious.
- Garlic Powder - we love garlic but for baked dips we recommend using garlic powder as raw garlic can be overpowering since the dips bake so quickly. You don't want to have to pass out mints after your party.

How to Make Jalapeno Popper Corn Dip

- Preheat the oven to 375℉. Grease an oven safe skillet or oven proof baking dish with cooking spray.
- Optional: reserve 1 tablespoon each of corn, cooked bacon, and diced jalapenos to use as garnish. Set aside in a small bowl.
- In a large bowl combine the cheddar cheese, cream cheese, and sour cream. Mix until evenly combined.
Tip: ensure the cream cheese is at room temperature, or microwave on a plate for 15 seconds to soften. - Add in the cooked bacon, corn, jalapenos, and garlic powder. Mix until evenly combined.
- Evenly spread the mixture into the prepared skillet or baking dish.
Optional: top with the reserved corn, cooked bacon, and diced jalapenos. - Bake the dip covered with foil for 15 minutes. Uncover and continue baking for 3-5 minutes or until bubbly and light golden browned on top.
- Top with chopped green onions. Serve and enjoy!

Tips for the Best Dip
- Flavor Variations - we love jalapeno poppers and the classic combo of bacon, cheddar cheese, cream cheese and sweet corn. However, you can customize this dip with different mix-in's. For example, crispy prosciutto instead of bacon, pepper jack cheese instead of cheddar, and pimento cheese instead of cream cheese!
- For Serving - this dip can be served with chips, crackers, vegetable sticks, warm baguette, crostini, or bread to dip. It's a fun way to keep the dip unique each time you serve it!
- Spice Level - jalapenos are a fairly mild pepper. If you prefer to add more spice to this dip you can add 1 tablespoon of hot sauce when stirring the dip together. You can also swap the cheddar cheese for a spicy jalapeno havarti or pepper jack cheese!

FAQ
To reheat the dip, cover with foil and bake in the oven for 5-8 minutes at 350°F or until warmed through. You can also microwave the dip in 20 second intervals until warmed through.
Cover the cooled dip with foil or plastic wrap and store in the fridge for up to 3 days (check the best before date on your sour cream and cheeses and adjust accordingly).
We do not recommend freezing this dip as the base is dairy which tends to split when frozen and thawed.
Yes! This dip is perfect for make ahead. Cover with foil or plastic wrap and store in the fridge up to 1 day in advance. Just before serving, bake according to recipe baking directions but add 5 minutes to the baking time.
