We love quick and easy breakfasts that also work great for meal prep! No need to stress about making individual breakfast sandwiches or wraps for the family. Instead, you can bake a tray of 12 breakfast rolls in a fraction of the time.
Our breakfast croissant cups were a huge viral hit, so we knew we needed to come up with another fun and easy breakfast recipe! These breakfast rolls are not only cute, but also so easy, flavor-packed, and customizable with different filling options! They are perfect for busy weekday mornings, cozy Christmas mornings breakfast, and holiday brunch!
What are Breakfast Rolls
Breakfast rolls are a unique twist on a classic breakfast sandwich. Pizza dough is rolled out and topped with scrambled eggs, bacon, sausage, and cheese. They are rolled like a cinnamon roll and then sliced into pieces. They are baked until golden brown. The pizza dough is light and fluffy and the filling has all the irresistible breakfast sandwich flavors!

Ingredients

- Eggs - the scrambled eggs are so light and fluffy in the rolls! For a healthier recipe you can also swap for egg whites or do a combination of half whole eggs and half egg whites.
- Pizza Dough - the easiest rolls can be made with a tube of pizza dough. You just need to open the tube and unroll the dough, no rolling needed! You can also use a store-bought pizza dough ball, or a homemade one and then roll it out.
- Cheese - we love the combination of cheddar cheese, bacon, and eggs. But you can use any combination of shredded cheeses you like. You can even use a spicy cheese to add a bit of kick to the rolls!
- Milk - to keep the scrambled eggs light and fluffy.
- Green Onions - to garnish. They add a fresh pop of color and flavor.
- Butter - to cook the eggs.
- Bacon - who doesn't love bacon?! Crispy bacon adds the perfect crunch and salty flavor to the rolls. If you prefer to use only breakfast sausage, you can do that too!
- Breakfast Sausage - cooked and crumbled breakfast sausage adds protein and a great flavor to the breakfast rolls. If you prefer all bacon you can skip the sausage and double the bacon.

How to Make Breakfast Rolls

- In a small bowl, whisk together the eggs, milk, salt and pepper. Melt butter in a frying pan over medium heat, or spray the pan with cooking spray. Use a spatula to continuously stir the eggs to make scrambled eggs. Cook until the eggs are set, about 4-5 minutes. Set aside on a plate to cool once cooked.
- Remove the casing from the breakfast sausage and add to the frying pan. Use a spatula to break up the sausage into small pieces. Cook until golden brown and the meat is cooked through, about 5-6 minutes. Set aside on a plate to cool once cooked.
- Cook the strips of bacon in the frying pan until golden brown and crispy, about 3-4 minutes per side. Set aside on a paper towel-lined plate to drain the excess fat. Once cooled, crumble or chop the bacon into small pieces.
- Preheat the oven to 350˚F with a rack in the middle of the oven. Grease a 9”x13” baking tray or 12-cup muffin tin with cooking spray, or brush with cooking oil of choice.
- If using store-bought pizza dough ball, roll the dough out on a lightly floured surface into a large rectangle about ½” thick. If using a tube of Pillsbury pizza dough, simply unroll the tube and place on a lightly floured piece of parchment paper or on the kitchen counter.
- Evenly spread the shredded cheese on top top of the pizza dough. Evenly distribute the scrambled eggs on top, then the cooked sausage and bacon.

- Starting from the long side of the pizza dough, carefully and tightly, roll the dough to create a log. Once it is rolled, pinch the edge of the dough to seal it together. Place the log seam side down on a cutting board, and cut the log into 12 even pieces. Place each roll into the prepared baking tray.
- Bake for 20-25 minutes or until golden brown.
- Garnish the cooked rolls with thinly sliced green onions or parsley. Serve with salsa to dip and enjoy!

Tips for the Best Rolls
- Dough - we recommend using a store-bought ball of pizza dough or a tube of Pillsbury pizza dough for the easiest recipe. You can also make your own homemade pizza dough.
- Mix-Ins - we love these breakfast rolls because they are customizable. We love any combination of ham, bell peppers, spinach, red onions, green onions, sun-dried tomatoes, feta and more. Get creative and customize to your liking! The possibilities are endless.
- Make Ahead - you can prep all of the ingredients the night before and keep them stored in the fridge. On the day of serving just assemble the rolls and follow the baking directions. These also reheat extremely well, so you can fully cook the rolls up to 1 day in advance. Store in an airtight container in the fridge and then reheat on a baking tray covered with foil for 8-10 minutes at 350°F.

Oven Baked - place the breakfast rolls on a sheet pan and bake at 350°F for 8-10 minutes.
Microwave - place the breakfast rolls on a microwave safe plate and heat for about 1 minute (note: they will no longer be crispy with this method).
Air Fryer - transfer the breakfast rolls to the air fryer and cook at 350°F for 6-8 minutes.
Store the cooled breakfast rolls in an air tight container in the fridge for up to 4 days, or freeze following the steps below.
Yes! This is a great freezer-friendly recipe, perfect for meal prep, entertaining, and leftovers. Transfer the cooled rolls to a freezer safe container or Ziploc bag. Freeze for up to 3 months. If you need to stack them, place a layer of parchment paper or foil between the layers to prevent sticking. We recommend reheating from frozen. To reheat, bake the rolls covered with foil (spray the foil with cooking spray) at 350°F for 15-18 minutes to warm the centers, and then uncover for about 4-5 minutes to crispen up the cheese.
Yes! This is a great make ahead recipe. You can assemble the rolls up to 1 day in advance and store them on the baking tray, covered, in the fridge. Just before serving, remove the baking trays from the fridge, spray foil with cooking spray and cover the trays. Bake the rolls covered at 350°F for 15-18 minutes, and then uncover for about 4-5 minutes to crispen up the cheese. Serve and enjoy!
For a vegetarian version, use plant based sausage crumbles and plant based bacon.
