Reuben Egg Rolls are quite possibly my favorite unique appetizer. So simple and delicious the filling is just 3 ingredients. Serve with Thousand Island dressing to dip!
Reuben Egg Rolls Recipe
The ultimate twist on the classic Reuben sandwich. Switch out the bread and try these unique Rueben style egg rolls. Stuffed with corned beef, Swiss cheese and tangy sauerkraut. Serve with Thousand Island dressings to dip and enjoy all the great flavors of this deli classic sandwich!
Egg roll wrappers bubble up while cooking, leaving a light and crispy exterior. They are a must try! For a gluten free option substitute the egg roll wrappers for rice paper rolls. They are a thinner wrapper and cook quicker so reduce the cooking time by half.
I have included 3 cooking methods in the recipe below, air fried, deep fried stove top and oven baked. My personal favorite way to cook egg rolls is air fried. Not only is it a healthier option with less oil used but it is also much quicker as you don’t need to hover over the oven frying egg rolls in batches. Instead just pop them in the air fryer, set it and come back to perfectly cooked egg rolls.
What is in Reuben Egg Rolls?
- Corned Beef - a salt-cured brisket of beef. It is a salt and tangy meat that is the star of a Reuben sandwich. I buy mine regular sliced from the deli and chop it up into bite sized pieces for the egg roll filling
- Swiss Cheese - the classic cheese on a Reuben sandwich is swiss but you can substitute with mozzarella or any cheese of choice
- Sauerkraut - another classic topping of a Reuben sandwich is this tangy fermented cabbage that is incredibly nutritious and healthy
- Egg Roll Wrappers – egg roll wrappers are found in the refrigerator section of grocery stores (beside the chilled salad dressings and tofu).
- For a gluten free option use rice paper rolls instead.
- Thousand Island Dressing Optional - serve your egg rolls with the tangy Thousand Island dipping sauce to get all the great flavors of a classic Reuben sandwich
How to Make Reuben Egg Rolls

1 Dice the corned beef into bite sized pieces.
2 Dice the Swiss cheese or mozzarella cheese into bite sized pieces or shred.
3 To prepare the filling, in a medium sized bowl combine the corned beef, cheese and sauerkraut. Mix until evenly combined.
4 To assemble the egg rolls add 1 – 2 tablespoons of the filling to the center of each egg roll wrapper.
5 Dip your finger in water and wet the edges of the egg roll wrapper.
6 Fold in two opposite corners to the center and then tightly roll.
7 Repeat with remaining egg roll wrappers.
Cooking Methods
AIR FRYER COOKING METHOD
Brush both sides of the egg rolls with oil and Air Fry at 400°F for 5-10 minutes or until golden brown.
STOVE TOP COOKING METHOD
Heat a deep pot with oil on medium heat. Fry the egg rolls in small batches for 5 minutes or until golden brown.
OVEN BAKING METHOD
Brush the egg rolls with oil on both sides. Place directly on a sheet pan lined with tin foil OR on a sheet pan with a baking rack. Bake at 400°F for 10-15 minutes or until golden brown. Flip halfway through cooking and brush with more oil as needed.
Allow the egg rolls to cool for 2-3 minutes before serving, the filling will be very hot.
Serve with Thousand Island dressing to dip and enjoy!
How to Reheat Reuben Egg Rolls
Use one of these 3 options to reheat your egg rolls:
AIR FRYER REHEATING METHOD
Air Fry the cooked egg rolls at 400°F for 5 minutes, flipping halfway through. The egg roll wrapper will get crispy on the outside.
OVEN REHEATING METHOD
Place cooked egg rolls directly on a sheet pan lined with tin foil OR on a sheet pan with a rack. Bake at 400°F for 5 minutes. Flip halfway through reheating. The egg roll wrapper will get crispy on the outside.
MICROWAVE REHEATING METHOD
Microwave in 15 second intervals until warmed through (note: this reheating method will not make the egg roll wrapper crispy)

- 2 tablespoon oil (for cooking)
