Peach Pecan Arugula Salad Recipe
Salads get a bad reputation for being boring but that is definitely NOT the case with this salad. When you need a quick and delicious side dish that compliments just about ANY meal, this salad is perfect.
Whenever we serve a grilled meat, pasta, or sandwiches, we love to pair it with a salad. The possibilities for salads are endless and they are a super simple side that you can prepare in advance.
What is Peach Pecan Arugula Salad?
This salad is a perfect combination of unique flavors. Arugula is used as the base for the salad which has a peppery and nutty flavor. It pairs perfect with nuts and fruit! In comes the juicy and sweet peaches. One of our favorite summer fruits, which are so good on salads. Candied pecans add a nice crunch and sweetness to the salad.
The dressing is a simple homemade honey Dijon vinaigrette which is a staple in our house! You can make a big batch and keep it in the fridge for quick weeknight salads or lunches.

What is in Peach Pecan Arugula Salad?
- Arugula - this peppery salad green has the most unique flavor. If you are tired of boring salads, you have to try switching them up with arugula.
- Peaches - we love making this salad in the summer when peaches are their ripest! They are so sweet and juicy and pair perfectly with the peppery arugula.
- Candied Pecans - the addition of a candied nut versus just regular nuts adds a great texture and sweetness. You can use any variety of candied or honey roasted nut you can find but we just love the combination of peaches, pecans and arugula.
- Goat Cheese - this creamy cheese can instantly transform any salad from bland to bam! It has a rich creamy texture and tangy flavor. Other cheeses that work great for this salad are feta and shaved parmesan.
- Honey Dijon Vinaigrette
- White Wine Vinegar
- Honey
- Dijon Mustard

How to Make Peach Pecan Arugula Salad

1 Carefully slice the peach through the center around the pit. Gently twist the peach to remove each half from the pit. Slice the peach into wedges.
2 In a small bowl or glass jar add all of the honey Dijon vinaigrette ingredients. Whisk together or shake the jar until evenly combined. Season to taste to personal preference with additional honey for sweetness, vinegar for acidity, or olive oil to reduce the acidity.
3 Add the arugula to a large bowl or evenly spread it out over a serving platter.
4 Scatter the peaches and candied pecans over the salad.
5 Use your hands to crumble the goat cheese into small pieces over the salad.
6 Drizzle the dressing over the salad and serve immediately.
FAQs Peach Pecan Arugula Salad
Store leftover undressed salad in an air tight container in the fridge for up to 3 days.
You can make the salad ahead of time by preparing the dressing and storing in the fridge. Layer the arugula on a serving platter and top with the nuts and goat cheese. Cover with plastic wrap and store in the fridge. Just before serving slice the peaches and place on top of the salad.
This is a healthy salad with a mix of fruits, vegetables, leafy greens and healthy nuts. The dressing is a light dressing made with extra virgin olive oil and vinegar.

Ingredients
- 2 peaches (firm)
- 6 cups arugula
- ¼ cup goat cheese
- ¼ cup candied pecans (or pecans or nut of choice)
Honey Dijon Vinaigrette
- 4 tablespoon white wine vinegar
- 1 tablespoon olive oil (extra light tasting, or 2 tablespoon if you prefer a less vinegary dressing)
- 1 tablespoon Dijon mustard
- 1 tablespoon honey
- ¼ teaspoon salt
- Pinch of black pepper
