Cheesecake Factory is known for their extensive menu offerings and their unique pasta dishes! One of their most popular pasta dishes, and my personal favorite, is their Pasta da Vinci!
There is so much to love about this dish but one of the best things about it, is that it is so easy to make at home. You can have a restaurant quality meal at home in just 35 minutes.
For me a great pasta dish is one that has a nice balance of pasta, meat or seafood, vegetables and a creamy sauce! Pasta Da Vinci ticks all those boxes and it is simply irresistible.
What is Pasta Da Vinci?
This famous Cheesecake Factory dish is penne pasta with a creamy Maderia wine sauce. There are sautéed mushrooms, red onions, garlic and chicken in the dish. The sauce has a bit of a tangy flavor thanks to a unique secret ingredient - sour cream! Heavy cream, chicken broth and parmesan cheese finish off the tasty sauce.

What is in Pasta Da Vinci?
- Shiitake Mushrooms - these are the star of the show in this pasta dish. I highly recommend using shiitake mushrooms if you can find them. They are available in most grocery stores and have a very umami, delicious flavor. If you cannot find shiitakes you can use cremini mushrooms, button mushrooms or white mushrooms.
- Chicken - I love a pasta dish that has a protein like chicken in it, as it makes it a well rounded meal.
- Red Onion - my favorite onion! Red onions are great in pasta as they add a beautiful color and flavor.
- Penne - you can use any pasta you like but Cheesecake Factory makes this dish with penne pasta.
- Chicken Broth - part of the base of the sauce. You can use store bought, homemade, or even chicken bone broth for added nutrients!
- Cream - this pasta has a creamy Madeira wine sauce with a bit of tang from sour cream. You can use milk if you prefer but the sauce won't be as thick and velvety as it would be if you used cream.
- Sour Cream - this unique secret ingredient gives the sauce a tangy flavor.
- Garlic - everything is better with garlic and the more garlic the better in my books!
- Madeira Wine - a sweeter, fortified Portuguese wine that adds just the right amount of richness and sweetness to the sauce. If you cannot find Madeira wine you can use Marsala wine or a cooking red wine instead.
- Parmesan Cheese - parmesan cheese and pasta go together like peanut butter and jelly, so it's no surprise there is a generous amount of parmesan in this pasta dish!
- Salt, Pepper

Prepare the Veggies and Chicken
1 Cook the penne pasta al dente per the package directions. Drain and set aside while you prepare the sauce.
2 Slice the chicken breast into bite sized pieces and season with the salt and pepper.
3 In a large frying pan or skillet on medium-high heat melt the butter. Add the chicken and pan fry for 5-6 minutes. Flip the chicken and pan fry for an additional 5-6 minutes, or until cooked through. Remove the chicken from the pan.
4 Add the mushrooms, diced onion, and minced garlic to the pan. Sauté until tender, about 8-10 minutes.
Prepare the Sauce
1 Deglaze the pan by pouring in the wine and using the spatula to scrape any browned bits off the bottom of the pan.
2 Add in the chicken broth, bring to a simmer and reduce until slightly thickened.
3 Reduce the heat to low, add in the sour cream, heavy cream, and parmesan cheese. Stir until evenly combined.
4 Add the chicken and pasta to the pan, mix until evenly coated. Season to taste with the additional salt and pepper as needed.
Serve topped with additional parmesan cheese and enjoy!

Shiitake mushrooms are used to make Pasta Da Vinci. You can use cremini, button, or white mushrooms instead if you cannot find fresh shiitake mushrooms.
