Bruschetta Chicken Recipe

If you are looking for a fun way to change up your regular grilled chicken dinner, this is the perfect recipe for you! This is a healthy dinner the whole family will love that comes together in a flash.

Bruschetta has always been one of my favorite appetizers. I love to level up my classic bruschetta by adding feta cheese. My Feta Bruschetta Recipe is one of my most popular appetizers!

This recipe transforms classic bruschetta and classic grilled chicken into a delicious and fresh meal that is ready in 30 minutes! You will love how easy and delicious this recipe is.

What is Bruschetta Chicken?

Bruschetta Chicken features balsamic marinated chicken, fresh mozzarella, bruschetta mix and balsamic glaze. Bruschetta is traditionally an appetizer made with toasted bread that is topped with bruschetta mix. The bruschetta mix is a combination of diced tomatoes, red onion, garlic, fresh basil, parsley, olive oil, salt and pepper.

The chicken is marinated in a balsamic based marinade featuring lots of fresh garlic, honey, basil, oregano, parsley and balsamic vinegar. It is incredibly tender and moist thanks to the balsamic vinegar.

Once the chicken is grilled, it is topped with fresh mozzarella, which is the perfect creamy and melty cheese for this dish. The chicken is then topped with the fresh bruschetta mix and balsamic glaze. The balsamic glaze has a sweet and tangy flavor that ties all the components of the dish together.

Bruschetta Topping Ingredients

  • Tomatoes – Roma tomatoes are my favorite tomato to use for bruschetta as they have the least amount of seeds. The seeds are removed when preparing the recipe so you can use any variety of tomato but I do recommend Roma. You can also use garden fresh tomatoes!
  • Garlic – everything is better with garlic and bruschetta needs to be packed with garlicky goodness!
  • Red Onion – I love the pop of color that red onion adds to the bruschetta topping. It has a beautiful mix of red, purple and green from the fresh herbs.
  • Basil – fresh basil is recommended for the freshest and best flavor, but you can also also use dried basil if that is all you have on hand.
  • Parsley – fresh parsley is recommended but you can also use dried parsley.
  • Olive Oil – a good quality olive oil goes a long way in bruschetta. You can also use your choice of neutral cooking oil if you prefer.
  • Salt & Pepper

Balsamic Chicken Ingredients

  • Chicken Breast – boneless skinless chicken breast is used in this recipe as there is less shrinkage while cooking and the chicken holds it’s shape, making it perfect for topping with cheese and bruschetta. You can use boneless skinless chicken thighs if you prefer, but the chicken will shrink slightly and not have a straight uniform shape.
  • Balsamic Vinegar – balsamic and bruschetta are a perfect match. The two compliment each other so well, so it is no surprise the chicken for this dish is a balsamic marinated chicken. I highly recommend using balsamic vinegar but if you don’t have it on hand you can use white wine vinegar or red wine vinegar.
  • Garlic – fresh garlic gives the chicken a nice garlicky flavor.
  • Basil, Parsley, Oregano – these are three pantry staple spices I always have in my spice cabinet. They come in handy for many Italian recipes but you can also use Italian seasoning.
  • Honey – adds a sweetness to the marinade and also brings out the sweetness of the balsamic vinegar.
  • Olive Oil – or your preferred neutral cooking oil.
  • Salt & Pepper

How to Make Bruschetta Chicken

1 In a medium sized bowl add all of the bruschetta topping ingredients. Mix until evenly combined. Set aside in the fridge while you prepare the chicken.

2 In a large Ziploc bag or container add all of the marinade ingredients. Mix until evenly combined. Add in the chicken breast and mix until evenly coated.

3 Preheat grill/BBQ to 375ºF. See notes for oven baking, pan frying or air fryer cooking method.

4 Remove the chicken from the marinade and allow the excess marinade to drip off the chicken and then place on the hot grill.

5 Grill the chicken over direct heat for 4-5 minutes, or until grill marks have browned. Brush the chicken with the remaining marinade and then flip the chicken. Grill for an additional 4-5 minutes over direct heat, or until grill marks have browned.

6 Move the chicken breast to the other side of the grill over indirect heat and allow them to cook for an additional 8-10 minutes.

7 When the chicken is almost fully cooked, approximately 155ºF – 160ºF, add a slice of fresh mozzarella cheese on the center of each piece of chicken. Cook for an additional 3-4 minutes, or until the chicken reaches 165ºF and the mozzarella cheese has melted. Transfer the chicken to a plate and cover with foil. Allow to rest for 5 minutes.

8 If using homemade balsamic glaze, add the balsamic vinegar and sugar to a small saucepan over medium high heat. Bring to a boil. Once boiling reduce heat to low and simmer for 8-10 minutes or until thickened.

Transfer the chicken to a serving platter. Spoon the bruschetta topping over each piece of chicken and drizzle balsamic glaze over top. Serve and enjoy!

Meal Prep Bruschetta Chicken

The best part about this recipe is that it is not only a dinner recipe, this is a perfect meal prep recipe for school or work lunches served with a salad.

To meal prep this recipe, prepare the bruschetta mix and store in an airtight container in the fridge. Cook the chicken at the beginning of the week and top with the fresh mozzarella. For lunch, pack your chicken in a container and microwave until warmed through. Then top with the bruschetta mix and balsamic glaze! The bruschetta mix and cooked chicken can be stored in the fridge for up to 3-4 days.

Tips for the Best Bruschetta Chicken

  • Chicken – I recommend using boneless skinless chicken breast. Don’t worry about overcooking the chicken or drying out the chicken. The balsamic vinegar based marinade tenderizes the chicken and keeps it moist while cooking. Chicken breast holds it’s shape better while cooking compared to chicken thighs. The chicken breast is easier to top with the mozzarella cheese and bruschetta topping.
  • Marinade – since the marinade has vinegar that tenderizes the chicken, it should only be left to marinate up to 1 day in advance. You can also prepare the chicken marinade in a Ziploc freezer safe bag and freeze the marinated chicken. Thaw in the fridge overnight and then prepare the recipe as usual.
  • Bruschetta Mix – be sure to remove all of the seeds from the tomatoes or else the bruschetta mix will be overly watery and seedy. As the bruschetta mix marinates in the fridge the tomatoes will give off water. If the seeds are left in the bruschetta mix then it will become too watery.
  • Cheese – I recommend using fresh mozzarella for this recipe. It is softer than regular mozzarella cheese. In a pinch if all you have on hand is a bar of mozzarella cheese I recommend shredding the cheese and then topping the chicken with the cheese.

FAQs Bruschetta Chicken

How to store Bruschetta Chicken?

Store leftovers in an air tight container in the fridge for up to 3 days (be sure to check the expiration date of the cheese and adjust accordingly). If you expect to have leftovers, do not top all of the chicken with the bruschetta. Instead, store the bruschetta mix in a separate container and reheat the chicken on it’s own. Then top with the bruschetta mix and balsamic glaze.

How to reheat Bruschetta Chicken?

To reheat, transfer the chicken to a microwave safe dish and microwave for 2 minutes, or until warmed through. Or, transfer to an oven safe baking dish and bake at 350ºF for about 5 minutes, or until the chicken is warmed through.

Can I make Bruschetta Chicken ahead?

Yes! This is a perfect recipe for meal prep. Follow the recipe as per usual but do not top the chicken with the bruschetta mix or balsamic glaze. Just before serving, reheat the chicken and then top with the bruschetta mix and balsamic glaze.

Is Bruschetta Chicken healthy?

Yes! Bruschetta chicken is a healthy and nutritious meal. Using chicken breast instead of chicken thighs keeps the dish healthy and it is cooked with a minimal amount of oil. It is a high protein meal that is perfect for meal prep.

Bruschetta chicken is a great way to enjoy all the flavors of bruschetta in a gluten free version. This bruschetta chicken recipe is naturally gluten free.

Can I make vegetarian or vegan bruschetta chicken?

For a vegetarian or vegan option swap the chicken for Portobello mushrooms. Remove the stems and follow the recipe as per usual to marinate the mushrooms (omit the honey for a vegan recipe). Grill them, and place the cheese in the center of the mushroom. Then top with the bruschetta mix and balsamic glaze.

Ingredients
  

  • 1 fresh mozzarella ball, sliced into 4 thin pieces

Chicken Marinade

  • 4 boneless chicken breasts
  • 1/4 cup balsamic vinegar
  • 2 tbsp olive oil
  • 1 tbsp honey
  • 2 tbsp garlic, minced
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1 tsp dried parsley
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Bruschetta Topping

  • 4 large tomatoes, seeded and finely diced, roma
  • 1/2 small red onion, finely minced
  • 2 cloves garlic , finely grated
  • 1 tbsp olive oil
  • 8 – 10 fresh basil leaves, julienned
  • 1 tbsp fresh parsley, chopped
  • 1/4 tsp salt
  • 1/4 tsp pepper

Balsamic Glaze (Homemade or Store-bought)

  • 1/2 cup balsamic vinegar
  • 2 tsp brown sugar

Garnish

  • Parmesan cheese
  • Fresh Basil leaves

Instructions

Notes

Oven Baking Cooking Method
Transfer the chicken to an oven safe baking dish. Bake the chicken at 450°F for about 15-20 minutes, or until internal temperature reaches 165°F. Top the chicken with the cheese and cover the baking dish with foil. Rest for 5 minutes. 
Pan Fried Cooking Method
Heat a skillet or frying pan with 1 tbsp of oil. Pan fry the chicken on each side for 5 – 7 minutes, or until internal temperature reaches 165°F. Top the chicken with the cheese and cover the pan with the lid or foil. Rest for 5 minutes.
Air Fryer Cooking Method
Preheat Air Fryer to 375°F. Transfer the chicken to the air fryer and cook for 7-8 minutes. Flip the chicken and cook an additional 7-8 minutes. Cooking time may vary depending on the model or your air fryer and thickness of the chicken. Check the chicken temperature (must reach 165°F) and cook for an additional 2-3 minutes at a time between temperature checks.
