Sheet pan meals are an absolute must for busy weeknight dinners, lazy weekend meals, and for entertaining for a large crowd. There's nothing better than just popping all the ingredients onto a sheet and baking it in the oven with very little hands on cooking.
This Cajun shrimp and sausage sheet pan is perfect for entertaining a large crowd as you can double the recipe and make two trays and feed a whole party! Or make one tray of our Sheet Pan Teriyaki Salmon or Bacon Wrapped Chicken to have two different options!
What is Shrimp and Sausage Sheet Pan
This is a twist on a shrimp boil. The perfect combination of smoked sausage, red bell peppers and zucchini are seasoned with Cajun seasoning and roasted in the oven. In the last few minutes of cooking seasoned shrimp are added to the sheet pan and baked in the oven. You are left with a tray of the most delicious shrimp, sausage and veggies!

Ingredients

- Shrimp - using store bought frozen, peeled and deveined shrimp is the easiest option for this recipe. Look for medium sized shrimp, about 31-40 shrimp per pound. You can also use peel on shrimp and either peel them before cooking them or leave the peels on and peel them as you eat.
- Smoked Sausage - any smoked sausage works great for this recipe. You can you a regular smoked sausage, andouille sausage, or you can get a spicy smoke sausage to add some spice to the dish!
- Zucchini - we love the color zucchini adds to this sheet pan meal. It cooks at the same time as the peppers and sausage so it's the perfect nutrient packed veggie. Not to mention it helps you sneak in some veggies to your diet!
- Red Bell Peppers - we find red bell peppers are best for this recipe as they have a sweet flavor that pairs perfect with the Cajun seasoning. You can you any variety or combination of red, green, orange, or yellow bell peppers. For added spicy you can also add in some thinly sliced jalapenos!
- Cajun Seasoning - store-bought or homemade works great for this recipe.
- Oil - any cooking oil works great.

How to Make Cajun Shrimp and Sausage Sheet Pan

- Preheat oven to 425℉. Line a large sheet pan with foil and spray with cooking spray or oil, the foil is for easier cleanup, you can also cook this directly on the greased sheet pan.
- Add the smoked sausage, zucchini, yellow squash, and red bell pepper to the prepared sheet pan.
- Add half of the olive oil and half of the Cajun seasoning and toss until coated evenly. Evenly spread the sausage and veggies onto a sheet pan.
- Cook in the preheated oven for 10 minutes.
- In the meantime, toss the shrimp with the remaining olive oil and Cajun dressing. Distribute the shrimp in a single layer on the sheet pan and drizzle any excess oil from the bowl onto the shrimp. Bake until the shrimp is cooked through and pink, about 5 more minutes.
- Remove from the oven and garnish with parsley (optional). Serve and enjoy!

Tips for the Best Recipe
- Variety - this is a customizable and versatile recipe. You can use any veggies you have on hand for example, broccoli, cauliflower, snow peas, red onions cut into wedges, and more. The possibilities are endless. Get creative and use your favorite veggies. If using potatoes or corn, they will need to be boiled first as they will not cook through in time with the sausage and other vegetables.
- Spice Level - Cajun seasoning as a bit of spice on it's own. If you'd like to increase the spicy level of this recipe you can use a spicy smoke sausage such as a jalapeno cheddar smoked sausage and you can also add sliced jalapenos to roast with the veggies.
- Sheet Pan - any sheet pan will work for this recipe but if you have a dark color sheet pan they will work better as they retain heat and will really give the ingredients a nice roast!

Oven Baked - place leftovers on a sheet pan and bake at 350°F for 8-10 minutes.
Microwave - place leftovers on a microwave safe plate and heat for about 1-2 minutes, or until warmed through.
Air Fryer - transfer leftovers to the air fryer and cook at 350°F for 6-8 minutes.
Store cooled leftovers in an airtight container in the fridge for up to 3 days.

Yes! You can fully cook the recipe in advance (up to 3 days) and follow the reheating instructions. Or you can prepare all of the ingredients and arrange them on the sheet pan (store the shrimp in a separate bowl). Cover the tray and store in the fridge until ready to cook. Then follow the baking directions and add the shrimp as noted in the recipe.

- 1 lb smoked sausage (andouille or any smoked sausage of choice, sliced into ¼ " rounds)
- 2 lbs shrimp (peeled and deveined shrimp, thawed and rained if frozen)
- 1 zucchini (sliced into ¼" thick half moon pieces)
- 1 yellow squash (¼ " sliced and halved, or regular zucchini)
- 1 red bell pepper (cut into 1” pieces)
- 3 tablespoon Cajun seasoning (store bought or homemade recipe below)
- 2 tablespoon olive oil

- ½ teaspoon thyme
