When it comes to breakfast and brunch we are always looking for fun, unique, and most importantly... EASY recipes! These smash tacos are a family favorite for a reason. Breakfast sausage is smashed onto flour tortillas and pan fried until crispy. Topped with cheddar cheese, a fried runny egg, and salsa, they are flavor packed and so addictive!
These are such a fun twist on a breakfast burrito and they're even easier to make. There's no need to cook the sausage separately, it cooks right on the tortilla! They're perfect for weekend brunch, feeding a crowd, or a hearty high protein breakfast before a busy day. The whole family will be asking for these again and again!
What are Breakfast Smash Tacos
Smash tacos are made by spreading a thin layer of raw ground meat onto a tortilla, then placing it meat side down in a hot pan and pressing it flat so the meat and tortilla cook together until crispy. For this breakfast version, we use breakfast sausage and top each crispy taco with cheddar cheese, an egg cooked your favorite way, salsa and fresh green onions. It features all your favorite breakfast flavors in one crispy and cheesy taco!

- Breakfast Sausage - use bulk breakfast sausage or remove the casings from sausage links. You can also use maple, honey garlic, chorizo, or Italian sausage for different flavor variations.
- Eggs - cook them sunny side up, over easy or scrambled, whatever you like best!
- Flour Tortillas - small flour tortillas or street taco corn tortillas work best and crisp up beautifully. You can cook 3-4 tacos at a time in the pan by using small tortillas. You can also use medium sized if you prefer.
- Green Onions - for a fresh garnish.
- Cheddar Cheese - melted onto the sausage for the ultimate cheese pull! Monterey Jack, pepper jack or a Mexican blend are great too.
- Salsa - your favorite store-bought or homemade salsa adds a fresh and zesty kick.

How to Make Breakfast Smash Tacos

- Remove the casing from the sausage and place the meat in a bowl, or if you are using individual breakfast sausage links you can simply remove the casing from each one and use one sausage per tortilla for the recipe. Use a fork to spread the sausage meat over the tortillas. Ensure an evenly layer spread right to the edges of the tortilla for even cooking.
- Heat a frying pan on medium-high and spray lightly with cooking oil, or add a small drizzle of cooking oil. Working in batches, flip the tortillas meat side down into the pan and use your hand to "smash" the meat against the pan. This will ensure even cooking of the meat. Cook for 3-4 minutes, or until the meat is browned and the edges are crispy.
- Flip the tortillas and top the cooked sausage with about 2 tablespoons of shredded cheese. Continue cooking for another 2-3 minutes or until you see the edges and bottom of the tortillas turn golden brown and crispy. Once you start to smell the tortilla toasting use a spatula to peak underneath to see if it's nicely toasted and then remove it from the pan.
- Working in batches, crack 3-4 eggs into the pan at a time depending on the size of your frying pan. Pan fry the eggs sunny side up (4 minutes) or over easy (4 minutes on the first side then flip and cook for 2-3 minuets) or scramble the eggs.
- Once to the eggs are cooked, place one egg on top of each taco. Top with salsa and thinly sliced green onions. Serve and enjoy!

Tips for the Best Tacos
- Tortillas - you can use flour or corn tortillas for this recipe. We recommend using small flour tortillas or street taco sized corn tortillas for best results. This way an egg first perfectly on top of the tortilla and you can cook 3-4 tacos at a time in a frying pan.
- Flavor Variations - you can you any type of breakfast sausage and change it up with different flavors to keep your breakfast fresh and unique. Try maple sausage, chorizo, honey garlic, or even Italian sausage. They are all great for these tacos!
- Eggs - we personally love a runny egg yolk so we pan fry our eggs sunny side up or over easy for this recipe. You can also easily prepare a big batch of scrambled eggs instead. Prep and cook all the tacos and in a separate pan make a batch of scrambled eggs to serve with the tacos.

FAQ
For crispy leftovers, reheat in a hot skillet or air fryer at 375°F for 3-5 minutes.
Store leftover cooked smash tacos in an airtight container in the fridge. For best results, we recommend storing the uncooked sausage mixture and tortillas separately so they don’t get soggy.
You can freeze the tacos once they are cooked with the sausage meet but do not add the cheese or eggs. The cooked sausage tacos can be frozen for up to 3 months. Thaw them in the fridge overnight, pan fry them to reheat them and top with the cheese. Then cook your eggs and assemble the tacos!
You can fully cook the smash tacos up to 1 day in advance and then reheat in a frying pan or air fryer until warmed through. We recommend cooking the eggs fresh the same day, but if you prefer scrambled eggs you could make them 1 day in advance and microwave them before assembling the tacos.
Use corn tortillas and ensure the brand of breakfast sausage used is gluten free.
Skip the cheese or use a dairy-free shredded cheese. Most breakfast sausage is dairy free, but check the label.
