This is one of our favorite busy weeknight dinners because there's only one pan to clean. It's light and healthy but still so satisfying, and leftovers make the best meal prep lunches the next day.
When we're craving takeout but don't want to wait for delivery, this is what we make instead. It's sweet, spicy, tangy, and on the table faster than ordering in! It's perfect for busy weeknight family dinners and fancy enough for get together with family and friends! We love having a "fake-away" dinner at home with our homemade copycat recipes.
What is Thai Sweet Chili Shrimp Sheet Pan
This sheet pan dinner is made by tossing raw shrimp and quick-cooking vegetables in Thai sweet chili sauce, lime juice, olive oil, salt and pepper, then roasting everything together in a hot oven. The shrimp turns pink and juicy while the snow peas and peppers stay tender-crisp. It's finished with sesame seeds, green onions and fresh lime for a sweet, tangy and slightly spicy dinner in no time.
What to Serve with

- Shrimp - medium to large raw shrimp, peeled and deveined, with tails on or off, work great for this recipe. If using frozen shrimp, make sure they're fully thawed and patted dry.
- Bell Peppers - red, orange or yellow bell peppers add sweetness and color.
- Snap Peas - they cook in the same time as the shrimp and add a great crunch. Snow peas work too.
- Thai Sweet Chili Sauce - a sweet and slightly spicy sauce found in the Asian aisle of most grocery stores. It does all the flavor work in this recipe!
- Lime Juice - brightens up the sauce. Serve with extra lime wedges for squeezing.
- Olive Oil - helps the shrimp and veggies roast without burning the sauce.
- Salt and Pepper
- Garnish - sesame seeds, thinly sliced green onions and lime wedges.

How to Make Thai Sweet Chili Shrimp Sheet Pan

- If you are serving over rice, start by cooking the rice in a rice cooker or stove top according to package directions. While the rice cooks you can prepare the shrimp and vegetables.
- Preheat the oven to 400°F.
- To a large baking sheet with edges, add the shrimp, snow peas, and peppers.
- Add the Thai sweet chili sauce, lime juice, olive, salt and peppers. Toss and mix everything together until the shrimp and vegetables are well coated. Spreading everything out into an even layer on the pan.
- Place the pan in the oven and bake for 10-15 minutes, or until the shrimp is cooked through, and the vegetables are tender.
- Optional: you can remove the tray from the oven and brush the shrimp with additional sweet chili sauce. Then pop the tray back into the oven with the broiler on for 2-3 minutes to caramelize the sauce on the shrimp.
- Remove the baking sheet from the oven. Garnish with sesame seeds and/or sliced green onion. Serve the shrimp and veggies as or with rice, noodles, or cooked quinoa. Enjoy!

Tips for the Best Shrimp Dinner
- Veggies - the best part about sheet pan meals is that they are so versatile and customizable. You can swap the veggies for any you have on hand. We love any combination of broccoli, zucchini, cauliflower, carrots, snow peas, bell peppers, red onions, and more!
- Shrimp - if you are using frozen shrimp ensure they are fully thawed. If you add them to the tray while they are frozen they will give off too much water and will make the sauce runny and watery. If you are using frozen, fully cooked shrimp do not add them to the baking tray with the veggies. Allow the shrimp to fully thaw and cook the veggies first with the sauce. Then follow the recipe step to brush the shrimp with sweet chili sauce just to broil them and caramelize the sauce since they are already fully cooked.
- Flavor Variations - if you are worried about the spice level of this dish you can swap the sweet chili sauce for a store bought teriyaki sauce and make a kid friendly teriyaki shrimp sheet pan dinner!

Reheat in the microwave until warmed through, or you can reheat stove top in a frying pan or on a baking tray in the oven.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
Freeze for up to 2 months in an airtight container.
You can thaw the shrimp in the fridge overnight and assemble the sheet pan with the chopped veggies the night before. Keep the baking tray covered in the fridge overnight and then the day of cooking just add the shrimp and toss everything with the sweet chili sauce, oil, lime juice, salt, and pepper. Then follow the baking directions!
