Greek Pork Souvlaki Recipe
Greek Pork Souvlaki brings tender, grilled meat together with fresh and bright Greek flavors of lemon and herbs. This Pork Souvlaki is so easy to make! They explode with lemon garlic and herb flavors, and are absolutely perfect served with a side of tangy tzatziki sauce, rice and pita bread!
This pork souvlaki is the perfect main dish for a Mediterranean dining experience! Plan ahead and marinate these skewers a day in advance. Then on the day of serving just grill up your skewers and enjoy!
Once the marinating is out of the way, the skewers will be on your table in just a few minutes. Your family and friends will love these skewers, they are the perfect family style meal that kids will love!

What is in Greek Pork Souvlaki?
- For the best tender and moist pork souvlaki, pork tenderloin is used. The cut is naturally tender and the flavor packed greek marinate adds the perfect amount of flavor that keeps the meat tender and moist.
- The liquids in marinade is a combination of olive oil, red wine vinegar and lemon juice. The vinegar and lemon juice tenderizes the meat and also keeps it moist. Finely minced fresh garlic is my favorite part of the marinade.
- The aromatic spices and herbs - oregano, thyme, parsley, chili flakes, salt and pepper, create the ultimate Greek flavor profile!
How to Make Greek Pork Souvlaki

Marinate the Pork
1 Mix all of the marinade ingredients together in a small bowl.
2 Place pork cubes in a Ziploc bag (or large bowl) and pour in the marinade. Seal the bag (or cover the bowl with plastic wrap) and toss to coat pork evenly with the marinade, then open the bag and reseal, removing as much air as possible. Place the pork in the refrigerator for at least 4 hours to overnight.
Grill the Souvlaki
3 Heat your barbecue to medium high. Assemble the skewers by threading the meat onto the skewers (depending on the size of your skewers add cubes of meat until the skewer is full, do not press the meat too close together). If using wooden skewers soak them in water for at least 30 minutes - 1 hour, this ensures the wood does not burn while cooking.
4 Grill over medium high heat for about 10 minutes, 5 minutes per side, or until they are cooked through. The meat is done when it has a nice sear and feels firm. The safe internal cooking temperature for pork is 145°F. (At this temperature there may be a light blush of pink inside
5 Prepare the optional garnish by mixing the lemon juice and olive oil together. Remove the skewers from the BBQ and brush the sauce on top and top with fresh chopped parsley. This not only gives them a beautiful shine but it keeps them moist and adds an additional pop of lemon flavor!
Serve with rice, tzatziki sauce, pita bread and/or salad. Enjoy!
Tips for Grilling the Best Souvlaki
Grilled Pork Souvlaki is a delicious, easy meal. These are some tips for the best souvlaki!
- Soak Skewers
- To prevent skewers from burning, soak them in water for at least 30 minutes before adding pork to skewers and grilling, or use metal skewers
- Don't skip the marinating time!
- One of the reasons pork souvlaki is so delicious, juicy, and tender is because the pork is marinated for so long, allowing the oil to soak through the meat and help soften it for grilling - as well as soaking up tons of flavor.
- This souvlaki is best when left to marinate overnight - but can even be prepped up to two days ahead of cooking - so it's great to make for a party!
- Don't Over Flip the Souvlaki
- Grilled pork is smoky, rich, and delicious. A big part of this recipe is the caramelized crunchy bits around the pork from grilling.
- Don't over flip your pork, because you won't get a delicious, crunchy crust on the outside.
- If pork is cooking too fast, reduce heat, instead of flipping over and over. This will also help prevent pork from sticking too much to your grill.

- 1.5 - 2 lbs pork tenderloin (trimmed of silver skin and excess fat, cut into 1-inch cubes, pork loin can be used but tenderloin is recommended)

Very good and easy recipe. My kids are picky eaters, especially around pork. There were no leftovers. My pickiest even ate quite a bit of tzatziki which stunned me. Now saved to my favorites and I will make again.
