We are huge fans of entertaining and bruschetta is one of the most popular Italian appetizers! What's not to love about a piece of toasted baguette topped with tomatoes? In this version we add a creamy basil ricotta and roast the tomatoes with hot honey. It always disappears when we serve it at summer BBQ's, holiday parties, and game day parties.

What is Hot Honey Roasted Bruschetta
Bruschetta is a famous Italian appetizer that is made with a slice of toasted baguette, which is what the word bruschetta translates to. Our hot honey roasted bruschetta features cherry tomatoes that have been roasted with garlic, olive oil, and hot honey. Ricotta is seasoned with fresh basil and spread over the toasted slices of baguette. The roasted cherry tomatoes are served over top of the ricotta for the most irresistible bruschetta appetizer!

Ingredients

- Cherry Tomatoes - you can use cherry tomatoes or grape tomatoes (any color or variety) for this recipe. They are roasted whole so that the skins blister and the tomatoes slightly pop open.
- Ricotta Cheese - this creamy cheese is perfect for bruschetta. It has a mild flavor and is so delicious when paired with roasted tomatoes. You can swap this for a creamy goat cheese such as Boursin if you prefer or if that is what you have on hand.
- Baguette - a must have for bruschetta! We highly recommend using baguette but if you prefer to swap for a homemade bread, a store bought sour dough, or other crusty loaf of bread, we recommend slicing the pieces of bread in half or thirds to make smaller pieces for the bruschetta.
- Garlic - roasted with the tomatoes to infuse a rich garlic flavor.
- Basil - mixed into the ricotta to create a creamy basil ricotta cheese spread.
- Parsley - used to garnish the bruschetta (optional).
- Salt - to season the tomatoes.
- Oil - for roasting the tomatoes and brushing on the baguette for toasting.
- Hot Honey - this adds a sweet and spicy kick to the bruschetta but it is on the sweeter side. It is not an overly spicy sauce. You can swap for regular honey if you want to omit the spice.

How to Make Hot Honey Roasted Bruschetta

- Preheat oven to 350°F.
- To a medium sized roasting pan add the cherry tomatoes, garlic, olive oil, hot honey, and salt. Toss until evenly combined. Bake in the oven for about 20 – 25 minutes, or until the tomatoes are roasted and begin to pop open.
- While the tomatoes are roasting prepare the baguette. Slice the baguette into ½” slices (tip: slice the baguette on a slight angle to get longer pieces). You will get about 24-30 slices from one baguette.
- Arrange the slices of baguette on a large baking tray in a single layer. Brush both sides of the slices with the olive oil.
- Remove the tomatoes from the oven and allow to cool.
- Place the tray of sliced baguette in the oven for about 3-4 minutes, then flip the pieces of bread and bake for another 2-3 minutes or until both sides are lightly toasted.
- Transfer the toasted slices of baguette to a serving platter. Rub the tops of each piece of bread with the garlic, this will infuse garlic flavor into the bread.
- In a small bowl stir together the ricotta and thinly sliced basil leaves.

- To assemble the bruschetta, spread a layer of ricotta cheese on each piece of bread then top with a spoonful of the roasted cherry tomatoes. Drizzle additional hot honey over top and garnish with fresh parsley. Serve and enjoy!

Tips for the Best Hot Honey Roasted Bruschetta
- Baguette - we recommend using a baguette for this recipe to give you the perfect hand-held and bite sized appetizers. However, you can also use slices of sourdough bread, or crusty bread of choice. You can slice them into pieces and then cut them in half to make them easier to handle. The bread will get crunchy when toasted so you don't want the pieces to be too big.
- Tomatoes - this recipe is made with cherry tomatoes or grape tomatoes. You can use any variety or even a mix of heirloom cherry/grape tomatoes. For the best results of bursting tomatoes we do not recommend swapping for Roma tomatoes or regular tomatoes cut into pieces as they will break down too much while roasting.
- Spice Level - store bought hot honey is on the mild level of heat. If you prefer to have a spicier appetizer you can add some chili flakes to the honey and add chili flakes into the tomato mixture when they are roasting. This will infuse additional spice into the tomatoes.

FAQ
This appetizer is best served at room temperature.
Leftovers can be stored in the fridge in an air tight container or platter covered with plastic wrap for up to 1-2 days. The longer they are in the fridge the crostini will become soft and the tomatoes will release more liquid.
This recipe is not freezer friendly.
You can prepare the roasted tomatoes, basil ricotta, and slice the baguette up to 1 day in advance. Store the tomatoes and ricotta in the fridge overnight and store the sliced baguette in a Ziploc bag. The day of serving follow the baking directions to toast the baguette and put the roasted tomatoes in the oven at the same time to warm them up. Then assemble your bruschetta and enjoy!
This recipe is vegetarian.
Swap the ricotta for a plant based spreadable cheese. You can swap the honey for agave and add a pinch of chili flakes into the honey to give it a bit of spice!
For a gluten free recipe use a gluten free baguette.
For a dairy free recipe swap the ricotta cheese for a dairy free spreadable cheese.

- While the tomatoes are roasting prepare the baguette. Slice the 1 baguette into ½” slices (tip: slice the baguette on a slight angle to get longer pieces). You will get about 24-30 slices from one baguette.
- Arrange the slices of baguette on a large baking tray in a single layer. Brush both sides of the slices with the 4 tablespoon olive oil.
- Remove the tomatoes from the oven and allow to cool.
- Place the tray of sliced baguette in the oven for about 3-4 minutes, then flip the pieces of bread and bake for another 2-3 minutes or until both sides are lightly toasted.
- Transfer the toasted slices of baguette to a serving platter. Rub the tops of each piece of bread with the 1 clove garlic, this will infuse garlic flavor into the bread.

- To assemble the bruschetta, spread a layer of ricotta cheese on each piece of bread then top with a spoonful of the roasted cherry tomatoes. Drizzle additional ½ cup hot honey over top and garnish with fresh 2 tablespoon parsley. Serve and enjoy!
