Pizza pockets were one of our favorite after school snacks growing up. So we just knew we had to give them a grown-up upgrade with a drizzle of hot honey and light and flaky puff pastry. The puff pastry gives them the most light crispy texture. The sweet heat paired with the salty pepperoni is so addictive. You will be making these on repeat.
They are such a fun twist on pizza night and they are the perfect make ahead quick and easy appetizer for game days, movie nights and holiday entertaining. I'll warn you now... make a double batch so there's no fighting for the last pocket! They also freeze incredibly well for grab and go reheatable snacks!
What are Hot Honey Pizza Pockets
Homemade pizza pockets are a game changer. Store bought puff pastry is stuffed with all your favorite pizza toppings. To take them up a notch from classic pizza pockets, a drizzle of hot honey is added to the filling. It gives the pizza pockets the perfect sweet heat flavor. The tops are brushed with an Italian seasoned egg wash that adds the perfect flavors and gives the pockets a golden shine!

Ingredients

- Puff Pastry - store-bought puff pastry makes these quick and easy. Thaw it in the fridge overnight or on the counter for about 1 hour. Keep it cold so it puffs up nicely.
- Pizza Sauce - use your favorite jarred pizza sauce or homemade. Don't overfill, a little goes a long way!
- Mozzarella Cheese - shredded mozzarella gives you that classic cheesy pull.
- Pepperoni - pepperoni is the most classic and popular pizza topping. You can get creative and add sausage, bacon, or any other pizza toppings you like!
- Hot Honey - sweet with a spicy kick, it takes these to the next level! Use store-bought or make your own by warming honey with chili flakes.
- Egg Wash - an egg whisked with water and Italian seasoning helps seal the edges and gives the pastry a golden, shiny finish.
- Garnish - freshly grated Parmesan and chopped fresh basil or parsley.

How to Make Hot Honey Pizza Pockets

- Preheat the oven to 400°F. Line a large baking sheet or pizza tray with parchment paper and set aside.
- Unroll each thawed puff pastry sheet onto a lightly floured kitchen counter or cutting board.
- Cut each sheet into 6 even rectangles (12 pieces total).
- Whisk the egg in a small bowl. Brush the edges of 6 pieces of cut pastry with the whisked egg to create ¼ inch border of egg wash.
- Spread 2 tablespoons of pizza sauce on the center of the pastry, being careful not to touch the egg wash. Then add the pepperoni and shredded mozzarella on top of the sauce. Top the cheese with a drizzle of hot honey.

- Place a plain piece of pastry on top of each filled piece. Line up the edges of the pastry, you can gently stretch the top piece to ensure it lines up with the bottom piece. Press the edges firmly together with a fork to seal.
- Transfer the pizza pockets to the prepared baking sheet, spaced ½ inch apart, they will puff up while baking.
- Add the Italian seasoning and water to the remaining whisked egg. Stir to combine. Brush the tops and edges of the pizza pockets with egg wash.
- Important: Use a fork to poke a few small holes in the top of each pizza pocket so steam can escape while baking.
- Bake for 10-15 minutes until they are golden brown and puffed up.
- Optional: garnish with freshly grated Parmesan, chopped basil or parsley, and a drizzle of hot honey. Serve with marinara sauce for dipping. Enjoy!

Tips for the Best Pizza Pockets
- Keep the Pastry Cold - cold puff pastry puffs up the best while baking. If it gets too soft while you're working, pop it back in the fridge for 10 minutes.
- Don't Overfill - too much sauce or cheese will leak out while baking.
- Seal Well - use the egg wash and press the edges of the pastry firmly together with a fork all the way around so they do not pop open and leak while baking.
- Vent the Tops - poking a few holes in the top lets steam escape so the pockets don't burst.
- Switch Up the Fillings - get creative with your favorite pizza toppings. Try cooked sausage, ham, pineapple, mushrooms, and peppers.
