When I'm planning my holiday dinners and get together I like to have a few no bake easy dessert recipes on hand. Especially desserts that can be made in advance! These Gingerbread truffles are the perfect no bake make ahead dessert.
I love a classic gingerbread cookie and I was trying to think of a way I could enjoy all the flavors of a classic gingerbread cookie but elevate the presentation into something a little more fancy. In came the idea for gingerbread truffles.
A few years ago 3 ingredient Oreo truffles took the world by storm. They were everywhere and they were amazing. How can something so simple - ground up Oreos, cream cheese and chocolate - be so decadent? I have served Oreo truffles to family and friends and they don't believe me when I tell them the filling is simply crushed Oreos and cream cheese. They truly have the texture and flavor of a fresh made truffle from a chocolatier.
3 Ingredient Gingerbread Oreo Truffles Recipe
My gingerbread Oreo truffles are a twist on the classic Oreo truffles. Around the holidays Oreo released a number of festive flavors - mint, dark chocolate, candy cane and gingerbread. They have a strong gingerbread flavor and the filling cream has red crunchy sprinkles for added texture and festive color.
To make these truffles you only need 3 ingredients and some holiday music to play in the background as you roll and dip the truffles in chocolate! Decorate them with more crushed cookies on top for festive sprinkles.
I love serving these truffles at holiday get togethers and giving them as gifts. Just pick up a few nice holiday treat boxes, layer in festive parchment paper, add in the truffles and tie a big bow on them. I always have to show my friends and family pictures of me making them for them to believe I made them and didn't buy them!

What is in Gingerbread Truffles?
- Gingerbread Oreos, or Lotus Biscoff cookies or Gingerbread Cookies or Ginger Snaps - a sweet and fun festive cookie! The cookie cream has fun red sprinkles for extra crunch and color. To make this recipe you need 1 full box of Oreos... good luck trying to resist the urge to eat a cookie before you start making this recipe! I can say from experience it is a difficult task.
- Cream Cheese - provides the perfect creamy texture that binds the crushed Oreos together. Once chilled and set the truffles have a creamy decadent texture just like fresh truffles from a chocolatier. To this day, after making and eating hundreds of Oreo truffles I am still so impressed with them every time I have one!
- White Chocolate - the combination of gingerbread and white chocolate is really something special. The chocolate is sweet, creamy and melts in your mouth. I also love the clean look of the white chocolate making these truffles look like little snow balls... how cute!
How to Make Gingerbread Truffles

Prepare the Truffle Mix
1 Separate 2 Oreos from the box to keep aside for decorating. Add all remaining Oreos to a food processor or blender. Blend for about 30 seconds until the Oreos are in fine crumbs.
2 In a large bowl combine the room temperature cream cheese and crushed Oreos. Use a fork to mix until evenly combined.
Shape the Gingerbread Truffles
1 Using a teaspoon measuring spoon scoop out the truffle mixture and roll into a ball. Place on a sheet pan lined with parchment paper. Repeat until all truffles are shaped.
2 Place the rolled truffles into the freezer for 30 minutes. This will make it easier to dip in chocolate.
3 Place the 2 saved Gingerbread Oreos into the food processor or blender and blend until broken down into small crumbs.
4 In a small microwave safe bowl add the white chocolate. Microwave in 15 second intervals, stirring after each, until fully melted.
Decorate the Gingerbread Truffles
1 Remove the truffles from the freezer. One at a time insert a toothpick into the top of the truffle and dip into the white chocolate. Tap the toothpick against the side of the bowl to shake off the excess chocolate.
2 Place the dipped truffle onto the parchment paper lined sheet pan and use another toothpick to press the truffle down off the inserted toothpick. Top the truffle with the saved crushed Oreos to cover the hole left from the toothpick. Repeat with all truffles. You can also top with sprinkles. Return the dipped truffles to the fridge or freezer for the chocolate to harden for 5 - 10 minutes.
3 Serve and enjoy! For optimal freshness, keep the truffles stored in an air tight container in the fridge or freezer. Depending on the size of your container if you need to stack truffles in 2 or more rows, place a piece of parchment paper between the layers.
Tips for the Best Oreo Truffles
- Cream Cheese - ensure your cream cheese is at room temperature! Leave it out on the counter for at least 15 minutes. If the cream cheese is fresh out of the fridge it will be very difficult to mix with the cookie crumbles.
- Freezing - please do not skip the step of freeze the rolled truffles before dipping them in chocolate. If you try to dip the fresh rolled truffles into the chocolate they will crumble and fall apart. They need time to chill and freeze. The combination of cream cheese mixed with the Oreo cookie cream hardens when chilled.
- Melting Chocolate - microwaving chocolate can go from smooth and perfectly melted to burnt in a matter of seconds. Be very careful when microwaving the chocolate. Use 15 second intervals and thoroughly stir between each interval, scraping the bottom and sides of the bowl to ensure the chocolate evenly melts and does not burn.
