These Christmas Crack Cookies are made with only 4 pantry staple ingredients. A simple toffee is made with butter and brown sugar. It is boiled stove-top and then poured into a muffin tin with Ritz crackers. Baked just long enough for the toffee to set and harden, semi-sweet chocolate chips are then sprinkled over top of the toffee. Sprinkles decorate the top making them a fun treat for year round holiday entertaining like Christmas, Easter, Valentine's Day and more! They are one of the easiest cookies you can make.

Ingredients

- Ritz Crackers - Ritz crackers are perfect for this recipe because they are salty, light, airy, crispy, and fit right in a muffin tin to create the cookies!
- Butter - you can use salted or unsalted butter for this recipe. The crackers are already salted so if you prefer a stronger sweet and salty combination you can use salted butter. If you prefer a more sweet flavor you can use unsalted butter.
- Semi-Sweet Chocolate Chips - since the toffee layer is very sweet, we like to use semi-sweet chocolate chips. It's the perfect flavor combination with the toffee. You can also use milk chocolate chips if you prefer or white chocolate. It is fun to use a combination of chocolate chips and swirl them together for a fun design on top!
- Brown Sugar - this is boiled stove top with the butter to make the toffee. Please note you cannot swap this for any other type of sugar or else the toffee will not harden and set properly. We recommend dark brown sugar or golden brown sugar, not light brown sugar.
- Sprinkles - you can use any variety of sprinkles you like. It's a great way to make these cookies for different holidays such as Christmas, Easter, Valentine's Day, Thanksgiving and more. You can also top them with crush candy canes or any candies you like such as M&M's or Skittles!

How to Make Christmas Crack Cookies

- Preheat oven to 350℉. Place a cupcake/muffin liner in each muffin tin.
- Place one cracker in each muffin tin cup.
- In a medium pot over medium-low heat, add the butter and brown sugar. Bring to a rolling boil, stir occasionally and cook for 3 minutes, or until bubbling and amber in color.
- Remove pot from the heat and carefully ladle approximately 2 teaspoons over each cracker.
- Place the muffin tins in the oven and bake for 3-5 minutes, or until the toffee starts to bubble.
- Remove the muffin tins from the oven and immediately evenly distribute the chocolate chips over the top. Allow the chocolate chips to sit for 1-2 minutes, then use a spatula to evenly spread the chocolate over the toffee.
Tip: if the chocolate is not melting or spreading easily, place the muffin tins back in the oven for 1-2 minutes to melt the chocolate. Then spread the chocolate out. - Once the chocolate is spread, distribute the sprinkles or candies of choice on top. Let the toffee sit until completely cool, either at room temperature or you can refrigerate for 30 minutes - 1 hour.
- Pop the cookies out of the muffin tin, serve and enjoy! Store leftovers in an airtight container at room temperature or in the fridge.

Tips for the Best Cookies
- Baking Tray - if using a metal cookie tin it is crucial to use paper muffin or cupcake liners or the cookies may stick to the bottom of the muffin tin. You could also use a silicone muffin tin and then pop the cookies out. If you prefer to make smaller cookies you can use mini Ritz crackers, a mini muffin tin, and mini cupcake liners (or a mini silicone muffin tin).
- Toffee - watch the toffee mixture carefully as it boils. Boil it for exactly 3 minutes, no longer or it may burn. If you have a candy thermometer, you want to cook the toffee mixture until it reaches a temperature of 270°F - 290°F.
- Flavor Variations - the fun part about this recipe is that you can customize it to change up the flavor every time you make it. You can use different types of chocolate chips such as milk chocolate, dark chocolate, white chocolate or even use two types of chocolate and swirl them together! Get creative with toppings too! Swap out the sprinkles for chopped pecans, chopped walnuts, crushed candy canes, crushed pretzels, sea salt, or M&M candies or any combination!
