Flatbreads and pizza are perfect for quick weeknight meals, easy entertaining, and fancy holiday parties! Everyone loves a quick and easy flatbread as they are so versatile and customizable. Bruschetta is a fan favorite appetizer so of course we had to turn it into an irresistible flatbread!

What is Bruschetta Flatbread Pizza
This recipe is a fun twist on classic Italian bruschetta that is made with sliced baguette. We swapped the baguette for a flatbread to make the ultimate bruschetta pizza. A homemade bruschetta mix packed with tomatoes, garlic, basil, and parsley is spread over a flatbread. Then covered in parmesan cheese and mozzarella cheese and baked until golden brown! Sweet and sticky balsamic glaze is drizzled over the flatbread and then served warm. It is a flavor packed pizza you are sure to love!

Ingredients

- Tomato - bruschetta is most commonly made using Roma tomatoes that have been cored and seeded. They are a firm tomato with a great flavor. You can swap for any variety of tomato you like, just be sure to remove the seeds so that the flatbread doesn't get soggy from excess water.
- Mozzarella - the perfect cheese for pizza!
- Balsamic Glaze - this sweet and sticky glaze adds a fancy finish to the flatbread. It has a rich flavor that pairs perfect with the bruschetta mix.
- Flatbread - we love using store bought so that the recipe is even quicker and easier to make. Of course you can make your own flatbread but for a quick recipe we just pick one up from the store.
- Parmesan - adds a great flavor in addition to the mozzarella cheese.
- Garlic - part of the tomato bruschetta mix which adds a great garlic flavor to the flatbread.
- Oil - since there is no pizza sauce for this flatbread, we brush the flatbread with oil so that the edges do not burn while cooking and to keep the flatbread moist under the tomatoes and cheese.
- Basil and Parsley - fresh is recommended but in a pinch you can use dried. Both are part of the bruschetta mix.
- Salt and Pepper

How to Make Bruschetta Flatbread Pizza

- Preheat oven to 350℉.
- Slice the Roma tomatoes into quarters and remove the seeds. Slice the quarters into thin strips and then into small bite sized square pieces.
- In a medium sized bowl, combine the diced tomatoes, basil, parsley, garlic, salt, black pepper, and olive oil. Mix until evenly combined.
- Place the flatbread on a baking tray. Brush the olive oil on the flatbread.
- Evenly distribute the bruschetta mix over top of the flatbread.
- Sprinkle half of the parmesan cheese over the flatbread.
- Evenly distribute the shredded mozzarella cheese over the flatbread.
- Place the tray into the oven and bake for about 8-10 minutes or until the cheeses are melted.
- Remove the tray from the oven and immediately drizzle with balsamic glaze. Optional, garnish with additional fresh chopped basil and parmesan cheese.
- Depending on the size of the flatbread or crust used, slice into 6 or 8 pieces. Serve and enjoy!

- Flatbread - we love keeping a few flatbreads or pre-cooked store bought pizza crusts in the freezer for quick and easy weeknight dinners, last minute entertaining recipes, and pizza night snacks! You can use any variety or shape of flatbread from the store, or make it homemade. This recipe is great for entertaining because you can easily make a second flatbread using a gluten free flatbread if you have gluten free guests or family members.
- Tomatoes - as the tomatoes marinate they will give off water. For a quicker recipe you can prep the tomato bruschetta mix a day in advance. Before assembling the flatbread just be sure to drain the excess liquid that the tomatoes give off or else your flatbread will not get as crispy as it should.
- Customizable - the fun thing about pizza night is that you can customize it to you liking. Some fun additions to this bruschetta flatbread include roasted red peppers, marinated artichokes, roasted eggplant, marinated olives, and more! Get creative and add any toppings you like.

Oven Baked - place leftovers on a sheet pan and bake at 350°F for 5-7 minutes.
Microwave - place the leftovers on a microwave safe plate and heat for about 1 minute (note: the flatbread will no longer be crispy with this method).
Air Fryer - transfer the leftover pieces to the air fryer and cook at 350°F for 3-4 minutes.
Store cooled leftovers in an air tight container or Ziploc bag in the fridge for up to 4-5 days.
Yes! This recipe is freezer friendly. To freeze leftovers you can individually wrap the pieces in plastic wrap, store them in an air tight container, or store them in a freezer safe Ziploc bag. If you would like to freeze some flatbreads for make ahead meals or entertaining you can fully cook the flatbread, allow it to cool and then wrap in plastic wrap to freeze it (do not add the balsamic glaze before freezing!). Reheat in the oven at 350°F for 10-12 minutes or until warmed through and then garnish with the balsamic glaze.
Yes! This is a great make ahead recipe. You can assemble the flatbread up to 1 day in advance and store on the baking tray covered in the fridge. Just before serving, remove the baking tray from the fridge. Bake the flatbread covered at 350°F for 10-12 minutes, or until the cheese is golden brown and melted. Drizzle the balsamic glaze on top, serve and enjoy!

Ingredients
- 1 flatbread (store-bought, or pre-cooked pizza crust)
- 2 tablespoon olive oil
- 2 cups mozzarella cheese (shredded)
- ½ cup parmesan cheese (grated)
- ½ cup balsamic glaze (does not need to be measured, drizzle desired amount from bottle)
Bruschetta Mix
- 4 Roma tomatoes (medium sized, or tomatoes of choice)
- 1 tablespoon basil (fresh, chopped)
- 1 tablespoon parsley (fresh, chopped)
- 1 clove garlic (finely minced)
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 tablespoon olive oil
Instructions
