Pita Bread (2 Ingredient) Recipe
I bet you never thought you could make light and airy restaurant quality pita bread at home with only 2 ingredients! There is no yeast in this recipe so no need to worry about baking with yeast.
This shortcut pita bread is made with self rising flour and greek yogurt! Self rising flour is a blend of flour that already has a leavening agent added into it. Recipes that call for self rising flour often do not have baking powder listed as an ingredient as the baking powder is already included in the flour, as well as salt.
Using self rising flour in this pita recipes eliminates the need for using yeast. Yeast is a leavening agent that is most commonly used in bread making. However, it can sometimes be tricky to work with.
No need to worry about dry, dense pita bread with this recipe. Combining the self rising flour and greek yogurt creates the perfect light and airy dough that puffs up while cooking just like at your favorite Mediterranean restaurants.
This whole recipe takes only 20 minutes so you can whip up pita bread as part of your weeknight dinners! Serve with your favorite dip (mine is my creamy Feta Roasted Red Pepper Dip) or make a wrap with a grilled protein (try my Pork Souvlaki Skewers).
What is in Pita Bread?
- Self Rising Flour - is a blend of flour, baking powder and salt. It can be found in the baking aisle of grocery stores. If you cannot find self rising flour you can substitute 2 cups of self rising flour with 2 cups all purpose flour plus 3 teaspoons baking powder and ½ teaspoon salt
- Greek Yogurt - plain 0% or 2% greek yogurt can be used for this recipe. An added bonus of using greek yogurt in this recipe is it keeps the pita bread healthier and lower calorie than most store bought pitas that have oil in the dough and the greek yogurt adds protein. This recipe makes 6 pita breads with 8 grams of protein in each pita
How to Make Pita Bread

Prepare the Dough
1 In a medium sized bowl add the greek yogurt.
2 Gradually add in the flour. Mix after each addition.
3 When a dough ball starts to form turn the dough out onto a work surface (ex. clean kitchen counter).
4 Knead the dough for 5 – 10 minutes or until a smooth elastic dough forms.
5 Shape the dough into a circle and place back in the bowl. Cover with a lint free towel or plastic wrap.
6 Let the dough rest for 15 minutes.
7 Roll the dough out into a long and slice into 5 - 6 even pieces.
8 Roll out each piece into a thin pita shape. Note: the dough will puff up while cooking so roll it out as thin as possible.
Cook
9 Heat a medium sized frying pan with no oil or butter. Cooking one pita at a time, add a pita to the pan.
10 Once the pita starts to bubble up, approximately 2-3 minutes, use tongs or a spatula to flip the pita bread.
11 Try not to touch the pita too much or it will not puff up. Once it is flipped it will start to puff up.
12 Once it fully puffs up, approximately 2-3 minutes, flip one more time and cook to desired brownness (if you like it crispy cook an additional 1-2 minutes per side).
13 Remove the pita from the heat and wrap in a lint free towel to keep warm while cooking the remaining pitas. Serve and enjoy!
How to Reheat Pita Bread
Wrap pita bread in a damp paper towel. Microwave in 15 second intervals until warmed through and pliable.
How to Store Pita Bread
Store cooked and cooled pita bread in an air tight container or Ziploc bag.
Can you Freeze Pita Bread
Yes, freeze cooked and cooled pita bread in an air tight container or Ziploc bag for up to 1 month. If freezing multiple pita breads place a piece of parchment paper between them to prevent sticking.

Works great, I've made it several times! For my personal taste, I like more salt than what is already in my self-rising flour, though, so I add an extra 1/4 tsp salt to the flour before mixing in the yogurt.

I love this simple and delicious recipe. I prefer my pita to be soft and fluffy and this is exactly what I got with this recipe. It’s delicious on its own but also great dipped in Tzatziki sauce. I make my own yogurt so this is about as home made of a recipe as I could hope for. We’re in a heatwave so I made these early and will serve them with Greek salad for dinner tonight.

I haven't been able to find pita in any of my local groceries lately and the family was requesting gyros or dohners. When I saw this recipe, I honestly wasn't expecting it to be good; it seemed way too easy.
The good news: it was very easy. The first one I didn't roll thin enough, but after that they came out perfect. These were WAY better than any store-bought pitas. Flavor was good and the consistency was perfect; they didn't fall apart when wrapped around greasy meat, juicy veggies, and tzatziki.
