Spicy Salmon Egg Rolls are a great way to enjoy all the flavors of sushi without the stress of actually making sushi! They are so simple and delicious.
Spicy Salmon Sushi Egg Rolls
The filling of these spicy salmon egg rolls has all the flavors of a sushi roll - rice, soy sauce, sriracha, Kewpie mayo, avocado and roasted seaweed! These are a must try for sushi lovers.
Egg roll wrappers bubble up while cooking, leaving a light and crispy exterior. They are a must try! For a gluten free option substitute the egg roll wrappers for rice paper rolls. They are a thinner wrapper and cook quicker so reduce the cooking time by half.
I have included 3 cooking methods in the recipe below, air fried, deep fried stove top and oven baked. My personal favorite way to cook egg rolls is air fried. Not only is it a healthier option with less oil used but it is also much quicker as you don’t need to hover over the oven frying egg rolls in batches. Instead just pop them in the air fryer, set it and come back to perfectly cooked egg rolls.
What is in Spicy Salmon Egg Rolls?
- Salmon - this recipe is perfect for using leftover salmon and rice. If you have leftover salmon, you can use it for this recipe, or simply bake salmon seasoned with salt and pepper and any other seasoning you like. Additional seasoning is added into the filling so the salmon does not need to be overly seasoned. You can even use canned salmon for a budget friendly recipe
- Substitute - if you are not a fan of salmon swap it out with canned tuna instead for a spicy tuna egg roll!
- Rice - to replicate a sushi roll, white rice is used in my recipe, however you can us any kind of rice you like. If you have sushi rice you can use sushi rice but any white rice (ex. Jasmine) can be used. Fresh or left over rice can be used. If using left over rice, leave it at room temperature for about 10 - 15 minutes to bring it up to room temperature. This will make it easier to mix. Or microwave in 15 second intervals until warm
- Soy Sauce - instead of dipping sushi rolls into soy sauce, it is mixed into the filling of the egg roll to season the salmon and rice
Kewpie Mayo
- Japanese Kewpie Mayo - Kewpie mayo is a Japanese mayo that is sweeter than regular mayo. It can be found in the international aisle of grocery stores (available on Amazon - linked here)
- Substitute - regular mayonnaise
- Sriracha - my preferred hot sauce for this recipe is Sriracha however you can use any hot sauce of choice (available on Amazon - linked here)
- Substitute - if you do not have Kewpie Mayo and Sriracha already in your pantry and you don't want to buy both, you can find 'Spicy Mayo' in the international aisle of most grocery stores and use that instead
- Roasted Seaweed - if you have ever made sushi you will be familiar with nori sheets which are large sheets of roasted seaweed. For this recipe you can use those sheets and cut then into 4 smaller pieces or you can purchase roasted seaweed sheet snacks (available on Amazon - linked here)
- Avocado - adds a creamy texture to the filling of the egg roll
- Egg Roll Wrappers - egg roll wrappers are found in the refrigerator section of grocery stores (beside the chilled salad dressings and tofu).
- For a gluten free option use rice paper rolls instead (available on Amazon- linked here)
- Dipping Sauce - Spicy Mayo - can be made by mixing Japanese Kewpie Mayonnaise (or regular mayonnaise) and Sriracha, or you can find bottled spicy mayonnaise in the international aisle of most grocery stores (available on Amazon - linked here)
How to Make Spicy Salmon Egg Rolls

1 In a large bowl add the salmon and break up into small, bite sized pieces with a fork.
2 Add the cooked rice, soy sauce, Japanese Kewpie Mayonnaise, and sriracha. Mix until evenly combined.
3 To assemble the egg rolls, add a piece of roasted seaweed to the center. Top with 1-2 tablespoons of the spicy salmon rice mixture and 2-3 slices of avocado.
4 Dip your finger in water and wet the edges of the egg roll wrapper.
5 Fold in two opposite corners to the center and then tightly roll.
6 Repeat with remaining egg roll wrappers.
Cooking Methods
AIR FRYER COOKING METHOD
Brush both sides of the egg rolls with oil and Air Fry at 400°F for 5-10 minutes or until golden brown.
STOVE TOP COOKING METHOD
Heat a deep pot with oil on medium heat. Fry the egg rolls in small batches for 5 minutes or until golden brown.
OVEN BAKING METHOD
Brush the egg rolls with oil on both sides. Place directly on a sheet pan lined with tin foil OR on a sheet pan with a baking rack. Bake at 400°F for 10-15 minutes or until golden brown. Flip halfway through cooking and brush with more oil as needed.
Optional: once cooked sprinkle sesame seeds on top of the egg rolls for a garnish.
Allow the egg rolls to cool for 2-3 minutes before serving; the filling will be very hot.
Serve with spicy mayo to dip and enjoy!
How to Reheat Egg Rolls
Use one of these 3 options to reheat your egg rolls:
AIR FRYER REHEATING METHOD
Air Fry the cooked egg rolls at 400°F for 5 minutes, flipping halfway through. The egg roll wrapper will get crispy on the outside.
OVEN REHEATING METHOD
Place cooked egg rolls directly on a sheet pan lined with tin foil OR on a sheet pan with a rack. Bake at 400°F for 5 minutes. Flip halfway through reheating. The egg roll wrapper will get crispy on the outside.
MICROWAVE REHEATING METHOD
Microwave in 15 second intervals until warmed through (note: this reheating method will not make the egg roll wrapper crispy)
