Feta Chicken Cutlets Recipe

This healthy spin on traditional Chicken Parmesan and viral Feta Pasta Trend has become one of my families favorite dinner.

The combination of salty feta, sweet roasted tomatoes and garlic creates a fantastic sauce. Poured onto crispy chicken cutlets with more crumbled feta sprinkled on top creates an ultimate burst of flavor to please your taste buds.

Star Ingredient

  • Feta cheese and cherry tomatoes are roasting together to create a luxurious simple sauce. A hint of garlic is added to the sauce along with oregano and chili flakes to bring this sauce up a notch

How to make Feta Chicken Cutlets

This dish can be made all in an Air Fryer or all in the oven. I have included steps for both methods.

Chicken Cutlets

1 Season pounded chicken breast with salt and pepper.

2 Set up a dredging station with 3 small bowls. Add flour to one bowl, beaten egg to another, and the breadcrumbs to the third bowl.

3 First, coat chicken in flour and shake of excess. Then dip in egg, shake off excess. Coat in breadcrumbs.

AIR FYRER COOKING METHOD
Spray both sides of chicken with cooking spray and add to Air Fryer tray/basket. Add to Air Fryer and cook for 20-25 minutes or until golden brown and cooked through.

OVEN COOKING METHOD
Spray both sides of chicken with cooking spray and add to a baking sheet (optional place chicken on a wire rack on top of the baking sheet to keep the bottom crispy while cooking. If placed directly on the baking sheet the bottom will steam). Add to oven and cook for 20-25 minutes or until golden brown and cooked through.

Feta Tomato Sauce

AIR FRYER COOKING METHOD
Add all feta tomato sauce ingredients to an Air Fryer safe baking dish. Place in Air Fryer and cook for 20-25 minutes at 350°F or until cheese starts to melt and tomatoes pop open.

OVEN COOKING METHOD
Add all feta tomato sauce ingredients to an oven safe baking dish. Place in oven and cook for 20-25 minutes at 350°F or until cheese starts to melt and tomatoes pop open.

Remove the feta tomato sauce from the Air Fryer or Oven and use a fork to gently mash the tomatoes, garlic cloves and feta cheese.

Add in fresh chopped parsley (optional) and stir to combine.

To Serve

  • Pour feta tomato sauce over chicken cutlets and garnish with additional crumbled feta, chopped parsley and chili flakes.

  • 1/2 cup flour, all purpose
  • 1/2 cup Italian seasoned breadcrumbs
  • 1 egg, beaten
  • salt

Feta Tomato Sauce

  • 1.5 cups cherry tomatoes, rinsed
  • 1 cup feta cheese , brick (not sliced or crumbled)
  • 3 garlic cloves, peeled and crushed
  • 1/2 tsp chili flakes
  • 1/4 tsp dried oregano
  • 2 tbsp olive oil
  • 1 tsp parsley, finely chopped, optional

Garnish

  • crumbled feta cheese, optional
  • finely chopped parsley, optional
  • chili flakes, optional

Instructions
 

  • Preheat Air Fryer or Oven to 350°F.
