Peaches are one of our favorite fruits so any recipe we can add them to, we will! Trader Joe's was known for their jars of peach salsa. They would fly off the shelves and be devoured at parties and taco Tuesday dinners. It was sad to see the product discontinued. Fear no more, we have the perfect copycat recipe! This sweet and smoky salsa is one of our favorite unique additions to tacos, nachos, and burritos.
What is Chipotle Peach Salsa
This is a copycat recipe for Trader Joe's popular peach salsa that was discontinued. It features a beautiful mixture of peaches, tomatoes, red onions, jalapenos, garlic, and cilantro. The salsa has a tangy, smoky, and slightly spicy sauce thanks to the adobo sauce, lemon juice, lime juice, and cumin! It's a unique and irresistible salsa you will love.

Ingredients

- Peaches - we love making this salsa year round but especially during peach season. You want the peaches to be slightly firm so that you can easily remove the pit and dice up the peach.
- Tomato - Roma tomatoes are perfect for this salsa as they are not overly watery. You can use any tomato you prefer and remove the seeds.
- Chipotle Adobo Sauce - this smoky sauce with a bit of heat adds the perfect chipotle flavor to the salsa!
- Jalapeno - we love the flavor of jalapenos. Remove the seeds and ribs (the white lines inside the pepper that the seeds grow on) to keep the spice level low.
- Red Onion - our favorite onion to use in salsas! It has a beautiful color and aromatic sweet flavor. You can swap for white onions or green onions if you prefer.
- Parsley or Cilantro - cilantro is the more authentic ingredient for salsa but if you prefer parsley you can use that instead.
- Garlic - everything is better with garlic! Don't worry about a raw garlic flavor, the lemon and lime juice pickles the garlic.
- Cumin - this enhances the smoky flavor of the salsa.
- Lime and Lemon Juice - the combination of both lime and lemon juice yield the best tangy flavor!

How to Make Chipotle Peach Salsa

- Carefully use a knife to slice the peaches directly in half around the pit. Use two hands to twist the two sides of the peach in opposite directions, this will remove the peach from the pit. Slice the peach into small bite sized pieces and add to a large bowl.
- Slice the Roma tomatoes into small bite sized pieces and remove the seeds. Add to the large bowl.
- Add the finely diced red onion, jalapeno, garlic, adobo sauce, cumin, cilantro, lime juice, lemon juice, and salt to the bowl. Mix until evenly combined.
- Season to taste with additional salt and lime juice as needed.
- The salsa can be served immediately but it is best served after chilling for at least 10-15 minutes in the fridge, or overnight.
- Serve with tortilla chips or pita bread to dip and enjoy!

Tips for the Best Chipotle Peach Salsa
- Peaches - this salsa can be made year round (whether peaches are in season or not) because you want to use slightly firm peaches. In order to cut the peaches you need them to be a bit firm so you don't want to use overly ripe peaches. The sweetness from the peaches pair perfectly with the smoky adobo sauce.
- Spice Level - this recipe was designed to be not overly spicy. The adobo sauce has a bit of a kick to it. We only add 2 teaspoons, for a spicier salsa you can add 4 teaspoons or more. Just continue to taste the salsa and add a bit more sauce to get it spicier.
- Serving - this salsa is great served as a dip with tortilla chips or as a topping. You can serve this as a topping for tacos, taco bowls, burrito bowls, nachos, or in a burrito. It's a very versatile and flavor packed salsa!
