Sausage rolls are one of the most popular appetizers and snacks. We knew we had to create a fun festive version. Adding brie and cranberry sauce to sausage rolls to make the ultimate holiday appetizer was a no brainer! These are always a hit at our family get togethers and you will love them for your next holiday party.
What are Cranberry Brie Sausage Rolls
These appetizer bites are a fun festive twist on classic sausage rolls. Instead of just sausage for the filling, we add in rich and creamy brie cheese along with sweet and tangy cranberry sauce. It's the perfect sweet and salty combination. Not to mention cranberry and brie is the perfect holiday pairing! These will disappear at your holiday parties.

Ingredients

- Puff Pastry - this is a secret weapon in the kitchen when it comes to appetizers and finger foods! All you need to do is let the sheets of pastry thaw and you are ready to prep your fun appetizer.
- Sausage - we like to use a mild flavored sausage such as honey garlic, bratwurst, or mild Italian.
- Cranberry Sauce - store bought or homemade cranberry sauce works great for this recipe. If using homemade just make sure it's not too runny. You want a slightly thick cranberry sauce so that it will not ooze out when the sausage rolls are baking.
- Egg - whisked egg is used to seal the pastry on the sausage rolls once they are rolled up. It's also brushed on top of the sausage rolls to give them a glossy golden brown finish!
- Brie - this ooey gooey cheese is the perfect match for cranberry sauce. If your brie has a thick or hard rind you can slice it off that it is easier for you to slice the sausage rolls.

How to Make Cranberry Brie Sausage Rolls

- Thaw puff pastry according to package directions.
- Preheat oven to 400℉ or Air Fryer to 350℉.
- Line a large baking sheet with parchment paper, set aside.
- On a lightly floured surface unfold the thawed puff pastry and gently roll it out to flatten. Cut each sheet into 3 long rectangular sections.
- Slice the brie into thin strips. Place a row of brie on the center of each strip of pastry.
- Spread 2 tablespoon of cranberry sauce on top of the brie.
- Remove casing from sausage. Place sausage on top of the cranberry sauce and stretch into a thin strip to cover. Depending on the size of the sausage use 1-2 sausage per piece of pastry.

- Brush one edge of each piece of pastry with the whisked egg. Roll the sausage roll starting from the end without the egg wash, over onto the egg washed side. Leave the sausage roll seam side down. Gently press to remove excess air and seal the seam.
- Cut each sausage roll into 6 equal portions about 2" long. Or cut into 4 pieces to make larger sausage rolls.
- Brush the tops of each roll with the whisked egg.
- OVEN COOKING METHOD
Place sausage rolls 2" apart (seam side down) on a parchment paper lined baking sheet. Bake for 15-20 minutes or until cooked through and golden brown.
AIR FRYER COOKING METHOD
Place sausage rolls 2” apart (seam side down) in a lightly greased Air Fryer Basket/Tray. Air Fry for 8-10 minutes or until cooked through and golden brown. - Serve with cranberry sauce to dip and enjoy!

Tips for the Best Sausage Rolls
- Sausage - it is absolutely crucial to remove the casing from the sausage! If you leave the casing on or forget to remove them the sausage rolls will burst open while cooking and it will be really hard to slice the sausage rolls.
- Puff Pastry - thaw puff pastry in the fridge before using. To ensure the pastry does not stick, lightly flour your kitchen counter or cutting board. Lightly brush the sausage rolls with egg wash before baking to ensure a nice golden brown color.
- Brie - if your brie is very creamy you can pop it in the freezer for 5-10 minutes to get it to firm up. This will make it easier to slice. If the rind is fairly thick or hard you should slice some of it off so that it's easier to slice the sausage rolls.
- Flavor Variations - we love the classic combination of cranberry and brie but if you do not like cranberry sauce you can swap for fig jam!

FAQ
Air Fryer – Preheat Air Fryer to 350˚F. Add to the air fryer basket or tray and cook for 2-3 minutes, or until warmed through.
Oven – Preheat oven to 375˚F. Place on a baking sheet lined with parchment paper and cook for 4-5 minutes, or until warmed through.
Microwave – microwave for 30 seconds. Note this method will not make them crispy again.
Refrigerate in an air tight container in the fridge up to 3 days, or freeze for up to 3 months.
Cooked sausage rolls can be frozen for up to 3 months in an air tight container or Ziploc bag. If freezing in a container, add a piece of parchment paper between layers to prevent them from sticking together. Allow sausage rolls to thaw in the fridge overnight and reheat with the above steps, or reheat from frozen (add 2-3 minutes to the reheating time).
I recommend only making this recipe up to 2 days in advance. Reheat in the oven or air fryer before serving and enjoy.
For a vegetarian recipe you can use a plant based sausage. Please note most plant based sausage are pre-smoked or precooked so you will not be able to remove the casings. I would recommend slicing the sausage and pastry before rolling them so that you can get cleaner cuts.
Use gluten free store bought or homemade puff pastry and be sure to use a gluten free sausage.

Cranberry Brie Sausage Rolls

- 1 pack frozen puff pastry (2 sheet pack, pre-rolled)
- 1 ½ lb sausage (honey garlic, bratwurst, or mild Italian)
- 1 can cranberry sauce (or 1 ½ cups homemade cranberry sauce)
- 1 wheel brie (approximately 200-250 grams)
- 1 egg (whisked)
Instructions
- Thaw puff pastry according to package directions.
- Preheat oven to 400℉ or Air Fryer to 350℉.
- Line a large baking sheet with parchment paper, set aside.
- On a lightly floured surface unfold the thawed 1 pack frozen puff pastry and gently roll it out to flatten. Cut each sheet into 3 long rectangular sections.
