We love seafood appetizers and cheesy dips so we just knew we had to come up with a shrimp scampi dip! Shrimp scampi is one of the most popular and divine ways to prepare shrimp. What's not to love about garlicy, buttery, and lemony shrimp?! Pair that with a rich and creamy cheese dip and served with crusty bread or crackers to dip, it's a perfect match!
This quick and easy dip comes together in no time at all and can even be prepped ahead! It's perfect for holiday entertaining, Christmas parties, New Year's eve, game days, and family get togethers. It's the perfect fancy appetizers that's so easy to make and is sure to impress your guests.
What is Shrimp Scampi Dip
This shrimp scampi dip is a fun twist on classic shrimp scampi appetizer. Shrimp scampi features tender shrimp baked in a buttery lemon, garlic sauce with white wine and parsley. Our flavor packed dip version takes all the classic ingredients and flavors of shrimp scampi and packs it into a cheese based dip with cream cheese, parmesan and mozzarella. A buttery and crispy breadcrumb topping finishes off the dip and it's simply divine!

Ingredients

- Shrimp - any size of peeled and deveined frozen shrimp can be used. They are chopped into bite sized pieces for the dip so you can use any size.
- Cream Cheese - this is the base of the dip which gives it the most rich and creamy texture.
- Mozzarella - this gives the dip a nice stretchy cheese texture so you can get a cheese pull!
- Sour Cream - keeps the dip moist and creamy.
- Butter - to sauté the shrimp and toast the optional breadcrumbs topping.
- Panko Breadcrumbs (Optional) - there is an optional topping of panko breadcrumbs that are toasted in butter. They add a nice crispy texture to the dip.
- Garlic - to season the shrimp. We love extra garlicy shrimp scampi!
- Parmesan - adds a great flavor to the dip.
- White Wine - to sauté the shrimp. This is a classic ingredient in shrimp scampi. You can swap for chicken broth if you prefer an alcohol free recipe.
- Parsley - adds a fresh flavor and pop of green color.
- Lemon Juice - lemon is crucial for shrimp scampi. This is used to cook the shrimp and adds a great lemon flavor to the dip.
- Chili Flakes (Red Pepper Flakes) and Salt

How to Make Shrimp Scampi Dip

- Preheat the oven to 375℉ degrees. Coat an oven safe baking dish or skillet with cooking spray. Set aside.
- Optional: you can slice 3-4 shrimp down the center to place them raw on top of the dip before baking for garnish.
- In a large frying pan or skillet, over medium-low heat, melt the butter. Add the chopped shrimp, garlic, salt, and red pepper flakes. Cook, stirring frequently, until the shrimp just starts to turn pink, about 1 minute.
- Add the white wine. Bring it to a simmer until the shrimp are pink and cooked through for approximately 2 minutes.
- Stir in the lemon juice and parsley. Remove the pan from the heat and let the shrimp cool completely while you prepare the other ingredients.
- In a large bowl add the cream cheese, mozzarella, parmesan, and sour cream. Mix until evenly combined and smooth. You can use a handheld electric mixer if preferred. Set aside.
- In the meantime, add the butter to a small frying pan and melt. Stir in the panko breadcrumbs and stir until they start to get toasted and golden in color, about 2-3 minutes.Tip: do not step away from the breadcrumbs as they cook or they may burn.
- Add the cooled shrimp mixture to the cheese mixture bowl. Gently stir together until evenly combined.

- Spread the dip into an even layer in the prepared oven safe baking dish or skillet.
Optional: place the sliced raw shrimp on top of the dip for garnish. - Cover with foil and bake until the edges start to bubble, 8-10 minutes. Remove the foil and continue baking another 2-3 minutes until warmed through and bubbly.
- Remove the dip from the oven and top with the toasted breadcrumbs. Garnish with chopped fresh parsley.
- Serve hot with garlic butter toasted baguette, bread, or crackers. Enjoy!

Tips for the Best Shrimp Scampi Dip
- Shrimp - we recommend using raw, peeled and deveined shrimp for this recipe. This way you can cook and season the shrimp yourself with extra flavor before adding them into the dip mixture. If you prefer you can use cooked shrimp that have been thawed.
- Flavor Variations - this dip is versatile and can be made with just shrimp or a combination of different seafood. You can add in chopped scallops, crab, or lobster to the dip and they are all amazing!
- For Serving - this dip can be served with chips, crackers, vegetable sticks, warm baguette, crostini, or bread to dip. It's a fun way to keep the dip unique each time you serve it!

FAQ
To reheat the dip, cover with foil and bake in the oven for 5-8 minutes at 350°F or until warmed through. You can also microwave the dip in 20 second intervals until warmed through.
Cover the cooled dip with foil or plastic wrap and store in the fridge for up to 3 days (check the best before date on your sour cream and cheeses and adjust accordingly).
We do not recommend freezing this dip as the base is dairy which tends to split when frozen and thawed.
Yes! This dip is perfect for make ahead. Follow the recipe as per usual but do not bake the dip or toast the breadcrumbs yet. Cover with foil or plastic wrap and store in the fridge up to 1 day in advance. Just before serving, bake according to recipe baking directions but add 5 minutes to the baking time. While the dip bakes toast the breadcrumbs then add the on top of the dip once it's fully baked.
For this recipe to be gluten free use gluten free breadcrumbs for the topping.

- 2 tablespoon butter
- 2 tablespoon garlic (minced)
- ¼ teaspoon salt
- ¼ teaspoon red pepper flakes
- 3 tablespoon white wine (or chicken broth)

- ¼ cup fresh parsley (finely chopped)
- 8 oz cream cheese (softened at room temperature, 1 brick, 250 grams)
- 1 cup mozzarella (shredded)
- ½ cup parmesan cheese (grated)
- ⅓ cup sour cream

- ¼ tablespoon panko breadcrumbs (or plain breadcrumb, or Italian seasoned breadcrumbs)
