These bacon wrapped dates stuffed with Boursin cheese are the ultimate combination of sweet, salty, and creamy cheese. They are perfect for the holidays, game days, and family get togethers.
Be warned these bacon wrapped dates are highly addictive!! They may disappear before you can even get a second batch in the oven. These are always a hit when we bring them to parties and everyone asks for the recipe. You will be making these on repeat for Christmas, New Years and Super Bowl!

Bacon wrapped dates are a fun and popular appetizer. This version has dates that are stuffed with garlic and herb Boursin cheese and chopped pecans. The dates are wrapped in bacon and baked until the bacon is nice and crispy! The filling is so rich and creamy, the pecans add a bit of crunch, the dates are sweet and sticky, and the crispy bacon is simply divine. These are one of the most unique and flavor packed appetizers.

Ingredients

- Bacon - who doesn't love bacon? Regular or thin sliced bacon works best for this recipe. The smokey and salty bacon pairs perfect with the sweet dates.
- Dates - these are the perfect vessel for stuffing and wrapping with bacon. The cheese get stuffed into the date and the date is pressed closed. None of the cheese oozes out of the date. Dates have a soft texture and sweet flavor. The bacon gets oh so crispy and the dates are rich, sweet, sticky and filled with irresistible goat cheese!
- Boursin Goat Cheese - we love using the garlic and fine herbs Boursin cheese for this recipe as it has the most rich and creamy texture, and a great flavor from the garlic and herbs. You can swap for a regular plain goat cheese or any other flavored goat cheese you like. If you prefer cream cheese, you could also use herb and garlic or plain cream cheese.
- Pecans - this is optional but we like to add some chopped pecans as part of the filling of the date for added crunch and a nutty flavor. Nuts pair perfect with the sweet date and salty bacon.
- Balsamic Glaze (Optional) - to take these bacon wrapped dates up a notch, just before serving you can drizzle them with balsamic glaze. It's a sweet and sticky reduction of balsamic vinegar. It adds a tangy flavor and brings out the sweetness of the dates.

How to Make Boursin Bacon Wrapped Dates

- Preheat oven to 375℉. Line a rimming baking sheet with foil and/or parchment paper and place a metal wire rack on top. Or preheat Air Fryer to 350℉.
Tip: the wire rack allows air to circulate under the dates to ensure the bacon gets crispy on all sides. You can also just place the dates on the lined baking sheet without the rack and flip them halfway through cooking. - Carefully open each date (they should be pre-sliced since they are pitted dates. If using un-pitted dates, carefully slice them down the centre and remove the pit.) Use a knife or small spoon to spread approximately 1 teaspoon of the Boursin cheese into each date. You can also use a piping bag.
- Top the cheese with a pinch of the chopped nuts.
- Cut the slices of bacon in half. Wrap each date with a piece of bacon. Insert a toothpick to secure the bacon around the date, be sure to insert the toothpick on the loose end of the bacon so it does not unwrap when cooking.
- OVEN BAKING METHOD
Bake for 15-25 minutes, or until the bacon is crispy. Flip halfway through cooking.
AIR FRYER COOKING METHOD
Working in batches depending on the size of your air fryer, place the prepared dates in the preheated air fry in a single layer spaced ½ inch apart. Cook for 7-8 minutes, or until the bacon is crispy and cooked through. Flip halfway through cooking. - Remove the cooked dates from the baking tray or air fryer and place on a paper towel lined plate to remove any excess bacon grease.
- Serve the dates warm or at room temperature. Optional, you can arrange a bed of arugula on a serving platter, place the dates on top and drizzle with Balsamic glaze, honey, or hot honey and serve. Enjoy!

Tips for the Best Recipe
- Bacon - it is important to use regular sliced bacon or thin sliced, not thick cut bacon. If using thick cut bacon, the sections that overlap will not cook evenly as the bacon is too thick. Using regular or thin sliced will cook perfectly and get nice and crispy. You could use a flavored bacon for a fun twist such as maple or hickory smoked.
- Dates - with growing popularity you can find pitted dates in most grocery stores. We recommend medjool dates as they have a soft texture and sweet flavor. You can also use any dates you can find. If you cannot find pitted dates don't worry, just simply slice the date down the centre and pop the pit out. It's very easy to remove!
- Flavor Variations - we love the combination of Boursin garlic and fine herbs cheese with the dates and bacon. There are many different flavors of goat cheese available that you could use. You can use a plain goat cheese or any flavor you can find. We like the cranberry goat cheese, cranberry and pepper goat cheese, and you could even use herb and garlic cream cheese!

FAQ
Air Fryer – Preheat Air Fryer to 350˚F. Add to the air fryer basket or tray and cook for 2-3 minutes, or until warmed through.
Oven – Preheat oven to 375˚F. Place on a baking sheet lined with parchment paper and cook for 4-5 minutes, or until warmed through.
Microwave – microwave for 30 seconds. Note this method will not make them crispy.
Once fully cooled store in an airtight container in the refrigerator for 2-3 days.
Cooked bacon wrapped dates can be frozen for up to 3 months in an air tight container or Ziploc bag. If freezing in a container, add a piece of parchment paper between layers to prevent them from sticking together. Allow dates to thaw in the fridge overnight and reheat with the above steps, or reheat from frozen (add 2-3 minutes to the reheating time).
You can fully prepare the dates and wrap with bacon. Cover and keep in the refrigerator for up to 48 hours (noting expiry date of bacon). Then follow the baking directions.
