The best part is you can even prep the dip a day in advance, store it in the fridge and then bake it just before serving. Gone are the days of making stressful and labor intensive appetizers!

The dip is oh so creamy and flavor packed with sweet and sticky caramelized onions. Served with warm baguette, crackers or crostini to dip, it's always a hit!
What is Baked Caramelized Onion Dip
This baked caramelized onion dip is a creamy dip packed with Gruyere, mozzarella, parmesan cheese, and caramelized onions. The onions have the most sweet and sticky texture and irresistible flavor. A pinch of thyme and garlic powder gives the dip a divine pop of flavor. This dip is amazing spread on bread, or just eaten right out of the spoon! Be warned it's highly addictive and will disappear quickly.

Ingredients

- Onions - the star of this dip is the rich, sweet, and sticky caramelized onions. We recommend using regular cooking onions, yellow onions, or Vidalia onions.
- Sour Cream - this gives the dip a creamy texture and a pop of flavor.
- Mayonnaise - gives the dip the most irresistible creamy texture.
- Brown Sugar - this adds an extra level of sweetness to the caramelized onions and brings a sweetness to the dip.
- Parmesan Cheese - adds a rich umami flavor to the dip
- Gruyere Cheese - we love to use Gruyere for this dip as a homage to French onion soup. This is the cheese that is used to top this famous soup.
- Mozzarella - this melty cheese is perfect for dips so you can get a nice cheese pull!
- Butter and Oil - to caramelize the onions
- Thyme - a homage to the herb used in French onion soup.
- Garlic Powder - everything is better with garlic. We recommend garlic powder for this dip as the dip bakes quickly so you don't need to use fresh garlic which may be overpowering.

How to Make Baked Caramelized Onion Dip

- In a large non-stick skillet (or cast-iron pan) melt the butter and olive oil over medium heat. Add in the sliced onions and cook, stirring often. When the onions have reduced down and are a nice deep golden brown they are done. Approximately 20-25 minutes.
Note: you do not want the onions to brown immediately. They will soften and lose their moisture. The heat should be high enough to cook them, but not too high that they are browning on the bottom of the pan (this will happen at the very end of the caramelization process.) - Then add in the brown sugar, thyme, and ½ teaspoon salt and stir well to combine. Set the onions aside to cool.
- Preheat the oven to 375℉.
- In a bowl combine the sour cream, mayonnaise, garlic powder, Gruyere, mozzarella, and parmesan cheese. Mix until fully combined.
- Gently stir in the cooled onions.
- Spread into a baking dish, or medium sized cast iron skillet.
- Cover with foil and bake 10 minutes. Uncover and continue baking for another 5 minutes or until the dip is bubbly and golden on top.
- Serve hot with warm baguette slices, crackers, or crostini's to dip and enjoy!

Tips for the Best Dip
- Onions - be sure to be patient when caramelizing the onions. You need to cook them low and slow to bring out the best caramelized onion flavor. If you cook them too quickly you may end up with a burnt flavor. You don't want the onions to brown right away when cooking, they need to be cooked slowly to draw out the moisture and caramelize.
- Flavor Variations - this dip is versatile and a great way to use your favorite cheese to change up the flavor profile. Try a different shredded cheese instead of mozzarella - for example Monterey Jack, pepper Jack, and smoked gouda are all delicious! If you'd like to make the dip a bit heartier you can even add in some cooked and crumbled sausage meat or cooked bacon. Yum!!
- For Serving - this dip can be served with chips, crackers, vegetable sticks, warm baguette, crostini, or bread to dip. It's a fun way to keep the dip unique each time you serve it!

FAQ
To reheat the dip, cover with foil and bake in the oven for 5-8 minutes at 350°F or until warmed through. You can also microwave the dip in 20 second intervals until warmed through.
Cover the cooled dip with foil or plastic wrap and store in the fridge for up to 3 days (check the best before date on your sour cream and cheeses and adjust accordingly).
We do not recommend freezing this dip as the base is dairy which tends to split when frozen and thawed.
Yes! This dip is perfect for make ahead. Follow the recipe as per usual but do not bake the dip. Cover with foil or plastic wrap and store in the fridge up to 1 day in advance. Just before serving, bake according to recipe baking directions but add 5 minutes to the baking time.
