Ingredients
1.5 - 2lbspork tenderloin, trimmed of silver skin and excess fat, cut into 1-inch cubes, pork loin can be used but tenderloin is recommended
wooden skewers, soaked in water for 30 minutes before use, or metal skewers of choice
Mix all of the marinade ingredients together in a small bowl.
Place pork cubes in a Ziploc bag (or large bowl) and pour in the marinade. Seal the bag (or cover the bowl with plastic wrap) and toss to coat pork evenly with the marinade, then open the bag and reseal, removing as much air as possible. Place the pork in the refrigerator for at least 4 hours to overnight.
Heat your barbecue to medium high. Assemble the skewers by threading the meat onto the skewers (depending on the size of your skewers add cubes of meat until the skewer is full, do not press the meat too close together). If using wooden skewers soak them in water for at least 30 minutes - 1 hour, this ensures the wood does not burn while cooking.
Grill over medium high heat for about 10 minutes, 5 minutes per side or until they are cooked through. The meat is done when it has a nice sear and feels firm. The safe internal cooking temperature for pork is 145°F. (At this temperature there may be a light blush of pink inside
Prepare the optional garnish by mixing the lemon juice and olive oil together. Remove the skewers from the BBQ and brush the sauce on top and top with fresh chopped parsley. This not only gives them a beautiful shine but it keeps them moist and adds an additional pop of lemon flavor!
Serve with rice, tzatziki sauce, pita bread and/or salad. Enjoy!
