Twist on the classic Reuben Sandwich and baked potato. Thinly sliced potato stuffed with Swiss cheese and corned beef. Broiled to perfection and topped with sauerkraut and Thousand Island dressing. A must try!
5slices Swiss cheese, or mozzarella, cut into strips
oil, for cooking
salt and pepper, for seasoning

Instructions
Preheat Air Fryer or Oven to 350°F.
Wash and dry potatoes. Using two chopsticks or wooden spoons as a guide, carefully slice thin strips into the potato 3/4 of the way through the potato (be careful not to slice fully through the potato). This will create the hasselback.
Brush the potatoes with oil on both sides. Season with salt and pepper. Add to an Air Fryer tray/basket or oven safe baking tray.

Stuff strips of cheese and corned beef in alternating slices in each potato.
Return potatoes to Air Fryer or Oven and broil for 5 minutes until cheese melts and meat crisps up.
Top each potato with sauerkraut and Thousand Island dressing and serve. Enjoy!
